Very important sandwiches 👌🏼🌱 this is one of my favorite sammies ever and it’s really easy–5 ingredients if you don’t include lemon juice, salt, pepper, and hot sauce!

Toasted oatmeal bread with hummus, spinach, and avocado + chickpea salad 👅👅👅

Breakfast - spinach toast with hummus, pumpernickel toast with jam, plain kite hill yogurt with bloobs, lots of coffee with soymilk

Lunch - chickpea salad sandwich on olive bread, apple

Snack - coconut choco chip clif bar, green tea

Dinner - steamed japanese sweet potato, cannelini bean and black lentil salad, spinach with fig vinaigrette

Snack - cashewmilk ice cream yum

 I’ve been back on track since the new year and it helps to prepare and stock the fridge with lots of healthy stuffs. Whenever I get hungry, there’s always a good option to grab.

Vegan chickpea salad sandwiches, and french fries for me and Tyler 🌱 For this chickpea salad I didn’t use any vegan mayo because I never liked mayo in the first place haha I used mashed cooked chickpeas, finely chopped onion, celery, and carrot, added some dijon mustard, salt, pepper, lemon juice, fresh dill, and paprika. To make this creamy like how it would be with mayo, I took about a cup of the chickpeas and blended them in the food processor with some almond milk until it had a hummus consistency. This was so yummy and refreshing. We had this on 12-grain bread with horseradish mustard, spinach, tomato, and dill pickles!

I CAN post an intake wow I haven’t done this in a while!

Breakfast - multigrain bagel with kite hill cream cheese on one half and hummus on the other, a banana, coffee with soy
Lunch - chickpea salad sandwich, apple, tea
Snack - peanut toffee clif bar, half a green smoothie
Dinner - homemade goddess bowl with roasted za'atar potatoes, super grains, black lentils, spinach, sauerkraut, and carrot ginger dressing
Snack - cashew milk cookies n cream ice cream

Eating is going really really well actually, I am trying SO HARD to use reframe my thoughts and sit with and act opposite to my urges and I’m doing really well with both of those things…I’m actually really proud of myself that despite everything that’s going on, I’ve been able to maintain ED recovery!

Today’s lunch/dinner at work. Tuna sandwich, chickpeas, cherries and green tea. Chickpeas are my favorite at the moment 😋

Today was cardio day and my knees are killing. They were aching before I went gym but these high impact moves didn’t help at all. Plyo lunges and split squats are my least favorite.

Also I measured myself recently and I’ve lost 1-3cm in a few places and the most I’ve lost since January is 10cm on my chest, which I’m happy with.
