Vegan chickpea salad sandwiches, and french fries for me and Tyler 🌱
For this chickpea salad I didn’t use any vegan mayo because I never liked mayo in the first place haha I used mashed cooked chickpeas, finely chopped onion, celery, and carrot, added some dijon mustard, salt, pepper, lemon juice, fresh dill, and paprika. To make this creamy like how it would be with mayo, I took about a cup of the chickpeas and blended them in the food processor with some almond milk until it had a hummus consistency. This was so yummy and refreshing. We had this on 12-grain bread with horseradish mustard, spinach, tomato, and dill pickles!
I’m going to end up making another one of these in the future as I’m hoping to continue the Tuesday theme days for quite a while. Out of each week I’ve bolded my favourite recipe that I tried. Here’s what we have so far:

Breakfast - multigrain bagel with kite hill cream cheese on one half and hummus on the other, a banana, coffee with soy
Lunch - chickpea salad sandwich, apple, tea
Snack - peanut toffee clif bar, half a green smoothie
Dinner - homemade goddess bowl with roasted za'atar potatoes, super grains, black lentils, spinach, sauerkraut, and carrot ginger dressing
Snack - cashew milk cookies n cream ice cream
Eating is going really really well actually, I am trying SO HARD to use reframe my thoughts and sit with and act opposite to my urges and I’m doing really well with both of those things…I’m actually really proud of myself that despite everything that’s going on, I’ve been able to maintain ED recovery!
