chick'n salad

Holy crap I have finally made a succesful and perfect and delicious fake chicken salad!!! I used to make a curried TVP one that was okay, but this one is 10000 times better. I adapted it from like 3 different recipes online. 

Ingredients: 

  • 1 cup dry TVP
  • 1 cup water
  • ½ veggie bouillon cube (i used “not chicken”)
  • black pepper
  • garlic powder
  • onion powder
  • nutritional yeast
  • tamari (i used low sodium)
  • 1 can of chickpeas
  • vegan or regular mayo
  • yellow mustard
  • ¼ or so of a medium onion

How to make it:

  • Bring water, bouillon, garlic powder, onion powder, black pepper, and tamari to a simmer, turn off heat. add dry TVP to liquid, stir and let it set. Once the water is nice and absorbed, add uncooked onion and put in fridge to cool off. 
  • While the TVP is cooling, smash up a can of chick peas to whatever consistency you like. I left quite a few of them whole or only slightly smashed. 
  • Add chickpeas to TVP, pour on some nutritional yeast to taste, and mix together. 
  • Add a small amount of yellow mustard and mayo to whatever consistency you like. 
  • Let cool in fridge if you can wait but i could not. SO GOOD. 

As you can see I ate mine on a big ol leaf of lettuce. I also had some on a triscuit. This shit is wonderfulllll.
