Dinner!!! Tried a new recipe tonight too! Easy Taco Casserole, that’s what that mix if stuff on the side is. I stuff my tortilla with some and then ate the rest on the side!


  • 1 can black beans
  • 1 can pinto beans
  • 1 onion diced
  • 1 bell pepper died
  • 2 cups frozen corn
  • 1 packet of taco seasoning (I use rachel ray’s homemade recipe)
  • 1 ½ cups salsa

Mix all that good stuff together. Cover and bake at 350 for 30 minutes. Remove the cover and cook for 15 minutes (you could sprinkle some soy cheese on in the last 15 minutes if you want to. I just didn’t have any).

I had 1 cup of this stuff, 1 ½ fat free tortillas from whole foods (they’re E2 approved!), half an avocado, and some jalapenos. 463 calories. 

So here's the deal

January 1st I’m starting the 28 day plant strong diet. 

Basically, I’ll be cutting out meat, dairy, and oil (olive oil, stuff like that. I will eat foods with oils such as peanut butter and olives but not once it’s been squeezed out of them!) I was a vegetarian for almost 5 years and now that I actually like fruits and vegetables I don’t think it will be hard. What will be hard for me is eating out. We’re always eating at chains (sad face) and those “chefs” aren’t really looking for the challenge of cooking without meat/dairy/oils. I think I’m just  going to have to get a salad and nix cheese/croutons and bring my own dressing (like I usually do). I really want to continue past the 28 days, but the 28 days is just a kick start :)

Why am I doing this?

  • I honestly believe that a healthy vegan diet is the healthiest diet. I’ve just got to break the cycle and commit to it. 
  • Heart disease is the leading cause of death in America, and a plant based diet is the best way to reverse/prevent it. It’s also the best way to prevent/reverse a slew of other illnesses, two of which are obesity and diabetes. 
  • Environmentally speaking, a plant based diet is one of the best things you can do. 
  • I’ve known all this information for years, I’ve just ignored it. 

Where will you get protein

  • I won’t be taking protein supplements. I’ll be getting it from fruits and vegetables. Come at me. If you’re eating a healthy plant based diet there’s no need. 

So right now I’m trying out some recipes from the Engine 2 cookbook and Forks Over Knives cookbook so I can be prepared with foods I like instead of trying a recipe, hating it, and being forced to grab whatever is available. I’m really excited for this.
