🥕Carrot Cake Cupcakes🥕 


Pumpkin Spice Cupcakes with Cinnamon Cream Cheese Frosting

Yields 1 dozen cupcakes

The things you’ll need


  • 1 ¾ cup all purpose flour
  • 1 ½ teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup sugar
  • ½ cup packed light brown sugar
  • ½ cups oil
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese at room temperature
  • ½ cup butter
  • 2 ½ cup sifted powdered sugar
  • Pinch of salt
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 2 large mixing bowls
  • Medium mixing bowl
  • Whisk
  • 2 rubber spatulas
  • Electric mixer
  • 2 sets of whisk attachments
  • Baking sheet lined with parchment paper
  • Ice cream scoop
  • Cupcake tray
  • Orange silicone liners
  • Decorating bag fitted with a #849 tip
  • Pumpkin candies

Let’s get Started!

  1. Preheat oven to 350ºF.
  2. In a medium mixing bowl, whisk together flour, spices, salt, baking powder, and baking soda. Set aside.
  3. In a large mixing bowl, use a hand mixer to combine the sugars, oil, pumpkin, eggs and vanilla extract until smooth. Fold in dry ingredients until just combined.
  4. Scoop batter into lined cupcake tray about ¾ full. Bake for 20 to 22 minutes. Allow to fully cool before frosting.
  1. Use a hand mixer to beat cream cheese and butter until light and fluffy. Add in powdered sugar, salt, vanilla and cinnamon and mix until smooth.

Time to decorate!

  1. Scoop frosting into a decorating bag fitted with a #849 tip. Pipe two swirls on top of each other and top with a pumpkin candy.
  2. Ta-da! Pumpkin cupcakes with cinnamon cream cheese frosting!

Middle: Vanilla cupcake w/ Salted Caramel Frosting and drizzled Salted Caramel.

Bottom: Chocolate cupcake w/ Chocolate frosting and Belgium Chocolate embellishments.

Today my youngest turns 13. Thirteen!!! I officially have two teenagers. He is definitely my playful one who loves life. His birthday request (because he didn’t think I could do it) was vanilla cupcakes with a butterscotch filling and cream cheese frosting with sprinkles. I even found dinosaur ones :)

Big girl's day!

Scout is 6 (six!!) today. She’s requested donuts bc her highlights calendar says it’s national donut day so we’re about off to get those.

Then when we come home I’m gonna bake her cake - she wants chocolate cake w/strawberry icing. After I’ll get dinner prepped because after dill’s nap/lunch she’d like to go to the pool. Hopefully Major Dad will meet us there (he had 0530 duty today) and then we’ll go home for presents, dinner, cake, & probably Trolls or The Last Unicorn bc those are her favorite movies.
