It’s tomato season! We have six plants, and all but two of them have some harvestable size tomatoes ready to pick. We’ve been snacking on sweet Sungolds for the past couple of weeks.

Last night we feasted on apple chutney and Cambozola crostini, crackers with Manchego cheese, toasted garlic bread with Sungold tomatoes, a smattering of red grapes, and icy glasses of Prosecco.

All for now, my friends. Onward and upward.

7:30 Workout with Melissa - Jillian Michaels Yoga Meltdown; weights
9:00 Shred papers
9:20 Work - Brown Bag (called in to cover a shift & worked regular shift); 1L water; banana, cinnamon raisin bagel; three 16oz Dr. Pepper; toasted rye bread with herb cream cheese, spinach, tomato, cucumber; coleslaw
19:45 Talk to husband on the phone
21:00 Chiropractic: The Documentary (didn’t finish); carrot cake; 20oz green tea with 1 tbsp clover honey

Breakfast Pizza (1)

One pita bread
One avocado
½ cup spinach
1 Roma tomato
(Tofu) Feta cheese
(Optional) Two eggs

 

Toast pita.

Spread avocado over bread.

Top with spinach and diced tomato.

Sprinkle with either vegan or non-vegan feta cheese.

(Optional) Top with two fried eggs, over easy.

(Sweet breakfasts are great, but recently I’ve gotten really into savory breakfasts! Not only is this breakfast delicious, it’s really filling. It keeps me satisfied until dinner. Yummy and smart!)
