Oatmeal Cookies Recipe

So I made these today, and I love this recipe a lot and I thought I’d share. :D This uses ounces as measurements, by the way, since I’m British and do not have a way of measuring cups. woe is me.


  • 4oz unsalted butter or margarine
  • 3oz caster sugar
  • 3oz brown sugar
  • 7oz plain flour
  • 1 egg
  • 2oz porridge oats
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract

1. Mix together the butter and sugar. Add the egg and vanilla extract and mix until just combined.

2. Sieve the flour, baking powder and cinnamon into the mixture and then fold them in slowly.

3. Add the oats and mix them in too. Preheat the oven to 180 degrees C and grease a baking tray.

4. You can make whatever size you want, but I normally use ¾ of a dessert-spoonful per cookie. Spoon the mixture out as equally as you can and then bake the cookies for 14 minutes.

5. When you take them out of the oven leave them on the baking tray for a couple of minutes to firm up, and then transfer them to a cooling rack.

These can be eaten warm or left to cool and will last for a few days :)
