Well hello Argentinian friend! The pudding is very simple but the flavour relies on one key ingredient, salted caramel essence, and I’m not sure how easy it is to get hold of that where you live. I only find it in Waitrose here in the UK but I reckon if you searched on Amazon or similar you could find it somewhere.

I just use a heaped tablespoon of cornflour, add sweetener of choice (maple syrup is nice) to taste-don’t make it too sweet or it gets sickly- and then shake in some salted caramel essence. Mix them together then whisk in maybe 200ml (?) unsweetened almond (or soy, hazelnut, coconut etc) milk, or 100 milk and 100ml water if you prefer. Then whisk over a medium heat until it thickens, which takes just a few minutes. I like it really thick like dulche de leche, but if it gets too thick I add some water and whisk again to combine it properly. You need to whisk quite fast whilst it’s cooking to make it smooth and creamy.

You can let it set and eat it cold from the fridge (it gets even thicker and more like dulche de leche) or eat it hot straight away like custard. Hope you like it! 😊
