Uncle Monty’s Coconut Cream Cake

Cake Ingredients

  • 2 sticks of butter, softened
  • ½ cup of vegetable oil 
  • 3 cups of sugar from the sugar bowl
  • 5 eggs
  • 1 cup coconut milk
  • 3 cups of flour
  • 2 teaspoons of baking powder
  • ¼ teaspoon of salt

Cake Directions

  1. Preheat oven to 350˚F. In a large bowl, stand mixer, or diving helmet, cream the butter, oil, and sugar. Add eggs and beat. 
  2. Mix flour, baking powder, and salt. Alternate adding the dry ingredients and coconut milk, stirring until homogenous, a word which here means “uniform in consistency.” 
  3. Evenly divide cake mix into three 9-inch cake pans, oiled and floured. Bake for 25 to 30 minutes, or until a toothpick inserted in the middle comes out clean. 

Frosting Ingredients

  • 16 oz of cream cheese
  • 3 cups of powdered sugar
  • 20 oz of shredded coconut
  • ½ teaspoon of vanilla extract 

Viscid Frosting Directions

  1. Mix together the cream cheese, sugar, vanilla, and about 2/3 of the coconut. 
  2. Stack the layers of the cake, applying copious amounts of frosting between each layer. Cover the outside of the layers with the remaining frosting. 
  3. Press the remaining shredded coconut onto the outside of the cake. 
  4. Refrigerate overnight.

How to make kimbap at home! There are a lot of different types of kimbap so you can really put any veggies or meat that you want and make your own style, we just did the most basic version.

seaweed, rice, carrot, cucumber, spinach, pickled radish, egg, fish cake, crab stick, ham, rice, sesame oil, sesame seeds, salt
1: Make some rice! Ours wasn’t too sticky but the stickier the better for rolling~
2: Beat 1-2 eggs (depending on how much you need/want) and add a pinch of salt and cook like a pancake over medium-low heat and then slice into strips. (All of your ingredients should be cut into strips for kimbap~)
3: Wash, peel, and slice your carrot, cucumber and any other ingredient that needs to be cut.
4: Cook all of your kimbap ingredients! The carrot, ham, crab stick, and fish cake just need to be cooked for a few minutes in a hot pan. For the carrots add a pinch of salt as you fry them
5: Spinach needs to be blanched in boiling water for just a minute or two and then taken out and rinsed in cold water to stop the cooking. Squeeze out excess water or they’ll be too wet. Sprinkle with a pinch of salt and a small amount of sesame oil and mix.
6: When rice is done cooking add salt, sesame seeds, and sesame oil to taste and mix well.
7: Take your seaweed and cover in a thin layer of rice mixture, leaving a small space at the end.

Now you’re ready to add everything and roll it up! The order doesn’t matter, just pile everything you want in whatever order you want~ As you roll, try to tuck all the ingredients in so they don’t spill out. It takes some practice so don’t worry if you don’t get it on your first try, the bamboo mat helps but you can also do it by hand.

Lightly brush the outside of your roll with sesame oil and sprinkle with sesame seeds. Brush your knife with sesame oil as well to help it slice through your kimbap cleanly~
There’s a lot of steps but you can make so many different types and flavors it’s really fun to try if you have the chance!

January 9, 2017 Day 8

Breakfast: siggi’s strawberry yogurt, banana, grapes

Lunch: homemade chicken and broccoli with brown “fried” rice, immune booster juice

Snack: organic peanut butter on a wheat rice cake, plain cheerios, carrot sticks

Dinner: chicken club on spinach wrap

I haven’t been feeling great today (I think a cold is coming on.) By dinner time I was ready for bed, so I’m skipping my workout today. It was supposed to be leg day but I’m going to incorporate it with my back workouts tomorrow as long as I’m feeling up to it. I hope this cold doesn’t stick around because I don’t have time for it!!!
