butternut squash cheese sauce

Vegan chili mac! This was a total experiment and it was delicious. Quinoa chili (I’ll post the recipe for that eventually) and 5 ingredient vegan mac and “cheese” 👅

The sauce is made with:
- ½ a butternut squash
- The cream of one can of coconut milk
- Approx. ½ cup of nutritional yeast
- 1/8 cup of water
- Salt to taste

Cut the squash into chunks, boil until soft, drain, and blend with the other ingredients.

This makes at least 10 servings worth of sauce, depending on how much pasta you’re having/how saucy you like it 💃🏻 make whatever pasta you like and mix in your desired amount of sauce, and then store the rest in a jar in the fridge for later use!

Serrano Ham & Baked Squash Lunch

For people who don’t quite like salads but would like to stay somewhat healthy with their cooking (like me..), this recipe gives a lot of flavours but yet keeps your lunch or even breakfast simple.


  • a handful of arugula
  • 1 butternut squash
  • 2 slices Serrano ham
  • 1/6 cup Parmesan cheese

  • For the sauce:
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • ½ tsp balsamic vinegar
  • 2 tbsp water


1. To prepare the sauce, mix everything thoroughly in a bowl. If you want a warm dish, hear the sauce in a small pot.

2. Next, line a pan with parchment paper. Slice the butternut squash in half, then drizzle with olive oil, salt & pepper. Bake in the oven at around 300'C.

3. When the squash is ready, cut into large cubes and place onto a large plate. Next, wrap the arugula in the ham. Finish the dish by drizzling Parmesan cheese and the sauce atop.

Are there any cheese substitutes/fake cheese that don't taste so much like bad kraft singles? I want to like daiya so much, but I can't stomach it, and I'm missing cheese

I’m not sure if you’re actually melting Daiya but I personally only use Daiya as a melting cheese (quesadillas, grilled cheese, mac and cheese). Have you tried Teese? I’d definitely pick up some nutritional yeast if you can to add it to any dish to make it cheesier. You really have to just try out different vegan cheeses in different dishes to figure out which cheeses you dig in which dishes. Here is a list of vegan cheeses available.
