Does anyone else randomly develop food aversions? Right now, for me, it’s meat. Tuesday for lunch I had chicken Alfredo and had to pick out over half the chicken and then last night we had pork chops for dinner. I ate it but didn’t love it and then brought the leftovers for lunch and I just could not stomach it. I burn out on food super easily as it is, but the fact that it’s all different meats is weird. Maybe I need to go meat free for a few days lol

My mom made pork chops for dinner even though she hates cooking because she knows my dad loves them, and downstairs I can hear my dad quietly but enthusiastically singing to himself, “I’m having pork chops, I’m having pork chops” followed by a second verse that I think maybe went, “my baby loves me.” MY PARENTS ARE SO CUTE

Katsudon - Yuri!!! on Ice

You might not want to be a pork cutlet, but with this recipe you can totally eat a pork cutlet!  And, really, what could be more desirable than a steaming bowl of rice, breaded pork cutlet, onions, and egg. Funnily enough, katsu and the word for victory are pronounced the same in Japanese (カツ and 勝つ, respectively), so athletes will often eat some katsudon before or after they compete.
So, in honor if Yuri Katsuki’s birthday, make some tasty katsudon!

Feeds 2

Ingredients:

  • 3 cups cooked rice ( following this recipe if you can.  Feel free to make it ahead of time and heat it up before plating, but I’ll let you know when to start cooking the rice if you want to make everything all at once)
  • 2 boneless pork chops (and a meat mallet)
  • Salt and pepper
  • Flour for dusting
  • 1 egg, beaten, for breading
  • 1 cup panko
  • ½  cup dashi stock (you can use chicken or vegetable stock if you can’t get a hold of some dashi or dashi powder)
  • 1 Tbsp. soy sauce
  • 2 Tbsp. mirin
  • 2 tsp. sugar
  • 1 small onion, sliced thin
  • 2 eggs
  • ¼ cup peas (alternatively, you can top it with scallions/green onions, thinly sliced nori, sesame seeds, whole snowpeas, and any combination of any of these)

Instructions:

  1. Begin heating up some oil in a deep pan on the stove.  About ½” of oil should do.  Alternatively, if you have a deep fryer and feel comfortable using it, go ahead a use that for the pork katsu.
  2. Use a meat mallet to pound the pork to about ¼” thick.
  3. Season the pork chops with salt and pepper, and dust them with the flour.
  4. Dip the pork into the first beaten egg, then coat them with panko crumbs.
  5. Once the oil is hot (get some water on your hand and flick it into the oil from a safe distance above, if it sizzles and pops, the oil is ready), place the breaded pork into the oil.  Fry them until golden brown on each side.  Once they’re cooked, remove them from the oil, and set them aside on a plate with some paper towels to absorb the excess oil.
  6. If you haven’t already made your rice, start cooking it now, using this recipe.
  7. Add the stock, soy sauce, mirin and sugar to a pan (one big enough to hold both pork chops) and bring it to a simmer.  Add in the onions and cover the pan with a lid.
  8. Once the onions are translucent, slice the pork katsu, and carefully (as to keep the slices together, treating them as if it were still a whole cutlet) add it on top of the onions.
  9. Beat the remaining two eggs and pour them on top of the pork katsu.  Cover the pan with the lid.
  10. Begin portioning the rice into two bowls.
  11. Once the eggs are done (still kind of jiggly and slimy looking, but definitely not liquid anymore.  If you’re squeamish about eggs, feel free to cook it a bit longer, but be careful not to allow the egg to become dry and fluffy), pick up the pan and slide/pour the sauce, onions, katsu, and egg onto the rice in the bowl.
  12. Top with peas or your choice of garnish.
  13. Reward yourself with this delicious meal. (But only after you win the skating competition, of course.)

Y/n and Alex both erupted with happiness when seeing John’s reaction to the new additions to his collection that they gifted him with. Of course it warmed Hercules’ insides seeing his boyfriend so excited so he obliged and shook his head.
    “Fine, fine, but you two are going to explain this to Laf when he sees John’s getting yet another one.”

    “I bet it’s because we look absolutely adorable.” John whispered into your ear. You laughed as the vibration tickled your skin. Laf nodded and pointed towards the two of you,
    “Right you are, John.”
  • Making breakfast with Laf to bring to a sleeping Alex who passed out at his desk on top of piles of papers.
  • Having Christmas movie marathons laying in Hercules’ arms while Laf holds Alex and John cuddles up to your side

  • But afterwards they would always make sure you felt okay and cleaned you up
  • Fights would be to an extreme limit but when they did occur everyone acted fast
  • Alex was usually involved in the arguments while John would stand to the side, holding you close if you were near shielding you from the disaster.
  • Lafayette could be explosive if involved so Hercules acted as the peacemaker
  • In most cases all boys wanted the mess to end the second it would start but being hot tempered, sometimes it didn’t matter if the issue was large enough
  • Alex would apologized no longer than five minutes after the start almost in tears feeling horrible for his actions
  • He would rush over to John and you pulling both of you in close as the other two would join in
  • You would all then spend the night over a tub of ice cream peacefully sorting out the issue at hand.

  • Out of all the boys, Alex is the most difficult to convince of things
  • It’s a chore alone just to get that boy to bed
  • And when clothes shopping, you always make sure to go with Laf or John
  • Alex is the smartest with the shopping and usually knows what you actually need and don’t need
  • Hercules insists he can make you whatever article of clothing you want
  • But John simply cannot resist saying no to you and Laf just wants to see you smile so he had no problem throwing whatever amount of money down to cover the cost. (In no means is this used in the gold digger content.)
  • It makes John and Laf so happy when they say yes to you and you erupt in a fit of happy giggles and ‘thanks yous’
  • Every once in awhile all of you would take a trip. It always varied depending on whose choice it was. Lafayette loved taking you all to his home in France, Alex was a fan of adventurous tropical vacations (sometimes cruises but it took a lot of convincing) and heading to Spain for a change of culture, John liked camping trips or mountain explorations, Hercules was a fan of road trips and calm vacations on the shores of beaches in Hawaii, and you managed to talk to boys into backpacking in Europe which although stressful during the process, was a successful vacation and you enjoyed weekends up north far from the social world.
  • Lafayette would come home from work and surprise you with various coloring books or Paris, India, New York, etc. from the local Barnes and Noble. This being said you would steal many or John’s coloring utensils to fill in the books.
  • The boys all had different drunk types
  • Alex was whiny. SOOOOO freaking whiny when drunk.
  • “Y/n… can you please cuddle me?”
    “Jack gimme kisses.”
    “Hercules can you make me pizza?”
    “Laf, babe, are you ignoring me? No baby, lay with me!”
    “Alex sweetheart, I’m doing laundry what do you want?”
  • John was the cuddly drunk who always wanted kisses and hugs. He’d latched himself onto whichever partner was closest and would die before letting go. If someone would say no to John- they’d pay the price. In an instant he’d erupt in a fury of tears and totally let go of himself. Herc, being the usual sober one, was there right away comforting the sensitive boy.
  • Laf was a happy drunk. There was always a award winning smile on his face when a drink was in his hand. He’d tell jokes in different accent and whisper incoherent French words in your ear. He liked to get touch with all his partners and always had a hand on at least one of you while intoxicated. Lafayette was known to laugh at least once every two minutes, sometimes at nothing at all while drunk. He found the world to be one huge joke and had the time of his life.
  • Hercules let loose entirely. He was more of a partier when drunk and liked to brag, a lot. It wasn’t always about entirely PG-13 things either if you know what I mean. He also enjoyed showing Laf, Alex, John, and yourself off as well. Not in a disrespectful manner, just talked about how much he loved all of you. His lips were constantly pressed against your temple as well as the other boys. He’d holler and shout at a ball game on the screen that while sober he wouldn’t even give a second glance to.
  • Speaking of sports, almost everyone in the house was into something different but when March came around, the house was madness… pun intended.
  • The boys as well as yourself would all make brackets. Money was involved, no doubt. Smack talk was also a component even though none of you cared for the sport too much until March.
  • Alex would watch every game leading up to the event feverishly mapping out his plan. In the end, he would take into account more of the end scores than the effort and passion of each team. His end game was between Gonzaga and North Carolina.
  • John would argue against Alex and root for all the underdogs. Things wouldn’t turn out well for him but he had fun! John liked cheering for all teams and tened to root for the team with the most passion and enthusiasm. He was one for effort and hustle so when all his first round picks lost, he didn’t mind.
  • There was no doubt about it, Lafayette cheered for the team ahead. He was a typical bandwagon and switch sides faster than any traitor in history. Laf claimed he didn’t do so but it was clear. Sometimes he would cheer for the team with the name he recognized but he did enjoy watching basketball and seeing the games. Not knowing whether to pick North or South Carolina, Lafayette cheated the system deciding to write ‘Carolina’ as the end winner, claiming he did it on accident but everyone knew what he was up to.
  • Hercules cheered for the team with the best colors. He wasn’t as into basketball as most and prefered to watch his loves get excited themselves. Although he did pick Gonzaga, due to Alex spending an entire week talking him into it. Hercules didn’t mind though, he had no idea what was going on anyways. At the start he had put in the Lakers and Bulls, not realizing the huge difference between college and professional.
  • You on the other hand had watched the teams throughout their whole season which also meant you understood every game was different so you took an approach similar to John. In the end, Alex was the closest to perfection and made sure to let you all know it. But he choose to spend the money won on a night out on the town filed with kisses, champagne, expensive food, and loving memories.
  • You and Alex would be overly involved in reality TV
  • Like don’t even get him started on all those Real Housewives shows. Alex lives for the, most likely scripted, drama. You both try to get the other boys in on it although the only one who bites the bait is Hercules. Her claims he ‘hates’ the shows but you had caught him one Sunday night after everyone had long passed taken on sleep. You had felt his side of the bed shift and soon enough he was creeping out of the room. You followed him in curiosity and the sight you found was no one to disappoint.
  • Hercules has an episode of Keeping Up With The Kardashians playing at the lowest volume and he was fully consumed.
  • You tiptoed silently down the wooden staircase holding a hand over your mouth to keep your breathing shallow. The light from the TV screen flashed in the dim lit room. You peeked out around the corner of the wall taking in the sight before you. Hopping out from behind the wall you shot your hand out at your boyfriend and hollered in delight,  
    “Ha! I knew it, you do love it!” Hercules jumped a mile high, his bowl of popcorn spilling out as he did so. His eyes flickered from the screen, to you, to the screen, then back to you again. Shooting his hands up surrender, Herc quickly snatched the remote from the cushion turning the show off instantly. “Sweetheart, it’s not what it looks like. I just- I wanted to see… fine you caught me. Don’t you dare tell Alex.”
    “Nope, too late.” A new voice appeared from the bottom of the stairs where a smug looking Alex stood. His hands were folded across his chest with his weight staggered to one hip. The cocky demeanor was shinning as bright as a new lightbulb. The introduction of another voice, or two, followed shortly after.
    “Damn Hercules, they got you too.” John commented sleepily. His messy locks curled around his face perfectly as his eyes batted heavily. You and Alex chuckled joining Hercules on the couch. Both of you were waiting for Monday to watch it together but what better time than the present.
    Alex snuggled into Hercule’s side humming at the man’s hand falling around his frame. You reached forward locking your hand with Alexander’s and rested your head on his shoulder. Laf smiled at the view and walked around the opposite end taking a seat on the floor. He turned around and faced Hercules with a side smirk,
    “C’mon babe I thought you were strong!”
    “Sorry you two! It’s just so terrible it’s addicting. Sit and watch it, just one and you’ll see what I mean.”

Whoops, sorry I didn’t understand. I don’t have any resources for that, so I threw one together for you! My boyfriend has been a line cook for about seven years now, and he’s taught me so much about food. There are lots of simple things you can do to make food taste better- but let’s start with the basics.

College Cooking 101

Materials

Here is a list of materials that I believe are absolutely necessary to creating a quality product. Feel free to substitute anything based on your own personal preferences.

Cooking supplies:

  • Non-stick frying pan (cast iron pans are much more difficult to clean)
  • Pot (I would recommend a small pot that you can use to cook for just yourself, and a larger pot for cooking portions or for company)
  • Lid for said pot
  • Rubber spatula (much better than wooden spoons)
  • Tongs
  • Sheet tray
  • Strainer
  • Scissors (kitchen scissors)
  • A cutting board (I recommend plastic because they’re easier to wash)
  • Cutting knife
  • Bread knife (both knives should be sharpened every six months at least, you can take them to your local kitchen supplies shop)

Spices:

  • Salt
  • Pepper
  • Dried chives (or real chives if you can swing them. Throw them in your ramen, your tuna salad, sprinkle them on top of pasta, etc)
  • Thyme (dried or fresh… dried is 3x as potent, use to season soups or pastas)
  • Rosemary (dried or fresh, use to season meats and starches)
  • Cumin (use this spice to rub meat)
  • Cinnamon
  • Sugar
  • Garlic powder or onion powder (used for meat rubs and seasoning soups or sauces)
  • Paprika (I would recommend avoiding smoked paprika, it’s got a super aggressive flavor… use this in small amounts sprinkled over things like you would the chives)

Basic produce:

  • Parmesan cheese (for sprinkling over pastas, you can get it pre-grated)
  • Cheddar cheese (for making sandwiches and mac and cheese)
  • Tomatoes (whole, crushed, paste, whatever… just have some sort of tomato product in your pantry at all times)
  • Potatoes (you can’t buy them pre-cut because the oxidize and turn gray if not used immediately… you can still eat them, but they don’t look pretty)
  • Onions (you can get them pre-cut)
  • Garlic (use to make sauce or soup bases)
  • Romaine hearts (lettuce has a short shelf life, but romaine hearts literally last forever and are healthier than eating iceberg lettuce)
  • Protein of some sort (whatever you like- steak, chicken, tofu, etc)
  • Something salty (like pickles, black olives, anchovies, etc)
  • Your favorite veggies (I like carrots and squashes the best)
  • Pasta (whatever is cheapest or on sale at your store)
  • Bread (freeze half a loaf and leave the rest in your fridge)
  • Eggs (egg beaters or whole eggs, whatever you like)
  • Butter (or a butter substitute)
  • Oil (olive oil is the most expensive)
  • Chicken stock (or vegetable stock, in a carton or cubed)


Techniques

Basic (super duper duper basic) instructions on how to cook various items. I am not a trained professional- the information I’m providing is based off of personal experience only.

Meat

  • Steak (skirt steak or cube steak are easiest)
    • Cooking: Cook with oil. Outside of the steak should be grey. The inside should be light pink.
    • Seasoning: Create a simple spice blend and rub it all over the meat. Spice rubs always include salt and pepper, add whatever other spices you want.
    • Pair with: Starches or veggies.
  • Chicken (skinless and precut are easiest)
    • Cooking: Cook with oil. Outside should be starting to crisp, inside should be white and dry.
    • Seasoning: Salt and pepper work best. You can also coat chicken in panko bread crumbs.
    • Pair with: Starches, veggies, fruits, or pasta.
  • Pork (pork chops are easiest)
    • Cooking: Cook with butter or oil. Outside should be starting to crisp. Inside should be the same color as the outside, and should feel very dry and hard.
    • Seasoning: Create a simple spice blend and rub it all over the meat. Spice rubs always include salt and pepper, add whatever other spices you want. Meat should be completely coated in the spice rub, or it won’t taste like anything but the oil.
    • Pair with: Starches, veggies, or fruits.

Starches

  • Potatoes (little potatoes are easiest)
    • Cooking: Cook with oil. Outside should be starting to crisp, inside fork tender.
    • Seasoning: Rub (literally rub the potatoes with your hands) salt, pepper, oil and rosemary all over the potatoes.
  • Pasta (shapes are easiest)
    • Cooking: Boil water with a teaspoon of salt. Wait until the water is visibly boiling to add your pasta. I like my pasta al dente, so I always cook it for the shortest amount of time listed on the box.
    • Seasoning: Thoroughly coat pasta with whatever sauce you’re using, or it will taste dry. Good prepared sauce brands: Newman’s Own, Classico, and Barilla.
  • Orzo/Cous Cous/Pastina
    • Cooking: Cook in chicken or vegetable stock following package instructions. Stir every so often, and add additional stock as it is absorbed into the pasta.
    • Seasoning: I like to add dried herbs to the sauce as it reduces to add flavor. You can also add veggies early on and let them cook in the sauce.

Veggies

  • Carrots/parsnips/beets (chopped are easiest)
    • Cooking: These can be pan fried in oil, boiled, cooked in a sauce/stew, or put on a sheet tray to roast in the oven. The easiest way to cook them is to add them to a sauce that you are heating up, and allow them to soften until they can be pierced by a fork.
    • Seasoning: Rub the veggies with salt before cooking, unless you are adding them to a sauce or stew.
  • Green beans/asparagus/brussels sprouts
    • Cooking: These are best pan fried with butter. Cook them until they are slightly crisped and fork tender. If you want to be fancy you can blanch them before hand. How to blanch: Boil water, and throw the veggies in for literally thirty seconds. Pour them into a strainer and douse them immediately with cold water from your sink tap until they are cool to the touch.
    • Seasoning: Salt works best before cooking. Butter after cooking.
  • Squash/eggplant/sweet potato (chopped are easiest)
    • Yes I know that sweet potato is a starch, but it fits better here.
    • Cooking: These veggies are best roasted until fork tender. Time varies. These veggies should be cooked with their skin left on.
    • Seasoning: Rub these veggies with salt and cook in a little oil. Top with butter after they are cooked.

Xie Huang Yu, Shanghai

Urban development continues at a record breaking pace here in Shanghai, and many of the old school mom & pop restaurants are closing up shop as their property is getting bought up by hotel and mall developers. Over the last 12 months since we moved here, I’ve seen two of my favorite noodle shops and two of my favorite dumpling makers shut their doors in Xintiandi. All on the same block! So the affordable, and authentic, lunch options near our office are dwindling. But yesterday, my friend Snowing told me about Xie Huang Yu, a local restaurant only a few blocks away that recently renovated and upgraded (and raised their prices) but still offers classic Shanghainese dishes without breaking the bank…

Xie Huang Yu is a cozy space where communal seating is encouraged. You must order at the counter before finding a table though, where a new picture-filled electronic menu board now offers English translations! Pay, take a number and find a seat. Your food arrives in about five minutes…

The deep-fried pork chop is one of the house specialties here and not to be missed…

Cost: 15 rmb or about $2.00 US.

The spicy pork over noodles was excellent…

Cost: 32 rmb or about $4.50 US.

Chinese cabbage fried in vinegar…

Cost: 18 rmb or about $2.50 US.

And one of Xie Huang Yu’s other house specialties, as they’re known for their seafood, crab and crab roe over noodles…

Cost: Their priciest dish at 58 rmb or about $8.50 US.

Sure, it’s not the two buck bowls of noodles we used to get a few months back, but a tasty local lunch for two like this for under twenty dollars I can still deal with.

Xie Huang Yu just became a weekly stop on my lunch circuit!
