Guacamole and rice 🍚✨😱👌 This was lunch today. Brown rice cooked with bay leaf, saucy veggies and guacamole. We added cabbage the past few days and it’s tasty! I also cooked mushrooms, peppers, carrots and zucchini with water and seasoned them with oregano, thyme, black pepper and tomato paste. For the guacamole, I mashed up one giant avocado with lemon juice and mixed in chopped basil. 🍃🍋 It was so good! And we just had watermelon for dinner, as usual. 🍉🍉 I hope you had a good Monday! Tomorrow we are off to Málaga again. 😎

Burrito bowl for lunch today! 🍴 Brown rice, water-sautéed veggies seasoned with oregano and tomato paste, lettuce, cilantro and tomato. A few black sesame seeds and nutritional yeast added post-photo. 😜👌 This was delicious!
Brown rice + black rice = purple rice! 🔮✨🌈😍 Today’s lunch was so good! Since we are using up *everything* in or cupboard before travelling onward to Madrid and then Zagreb, I mixed the last of or black rice with some brown rice for this pretty bowl. • I sautéed mushrooms, carrots, peppers and canned chickpeas with water and seasoned it with oregano and tomato paste. Yum! • We only have three more nights left in Torremolinos. 😱 Time to take advantage of the beach while we still can. 🙂 Enjoy the rest of your weekend! 💜
Homemade vegan spicy ramen miso soup! I used genmai (brown rice) miso pasta, tamari marinated mushrooms, cabbage, carrots, kale, green onion, broccoli, brown rice ramen noodles, sriracha, and sesame seeds. So good, so simple, so easy to make! Took like 10 minutes to wash and cut the veggies, and only 3 minutes to cook the ramen, and then you just throw em all together! Boom, done
