This was my mom’s birthday dinner that I made on saturday. So good!!! Coincidentally, our real oven is broken, so all of my baking had to be done in a toaster oven! Which is really difficult when your toaster oven doesn’t like to stay at one temperature and when 350 mean 375 or 400.

Corned Beef


  • Corned beef
  • 2 quarts of water
  • 2 pounds of ice
  • 1 cup of salt
  • A small handful of peppercorns
  • A small handful of allspice berries
  • 8 garlic cloves, whole
  • Ground pepper
  • 1 cup brown sugar
  • 1 large carrot chopped
  • 2 crumbled bay leaves


  1. Rub salt and pepper on corned beef 

  2. Dissolve salt and brown sugar in water. Add 2 pounds of ice. Add peppercorns, allspice, garlic cloves, carrot, bay leaves and corned beef. 

  3. Cook covered for 3 hours, give or take based on size.

Soda Bread


  • 3 cups flour
  • 1 Tbsp. baking powder
  • 1/3 cup white sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 egg, lightly beaten
  • 2 cups buttermilk
  • ¼ cup butter, melted


  1. Preheat oven to 325 degrees, Fahrenheit.
  2. Grease a 9x5 inch loaf pan
  3. Combine flour, baking soda, baking powder, salt, and sugar. 
  4. Blend egg and buttermilk together
  5. Mix liquid mixture with dry mixture until moistened
  6. Stir in butter
  7. Pour into pan and cook for around 65 minutes 

  8. Ta da! Done!

Red Velvet Cake with Cream Cheese frosting

Ingredients for cake:

  • Vegetable oil or a spray for the 9-inch cake pans
  • 2 ½ cups flower
  • 1 ½ sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cocoa powder
  • 1 ½ cup vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tbsp. red food coloring
  • 1 tsp. white distilled vinegar
  • 1 tsp. vanilla extract

Ingredients for frosting:

  • 1 pound (16 oz.) cream cheese, frosting
  • 4 cups sifted confectioners sugar
  • 1 cup unsalted butter, softened
  • 1 tsp. vanilla extract

Cake Steps:

  1. Preheat oven to 350 degrees, oil pans
  2. Sift together flour, sugar, baking soda, salt and cocoa powder in one large bowl 

  3. In a separate large bowl whisk oil, buttermilk, eggs, food coloring, vinegar, vanilla. 

  4. Mix the wet and the dry using a standing mixer, then divide it up in the 3 cake pans. 

  5. Cook in the oven for 30 minutes (or until a toothpick comes out clean), rotating half way through. 

  6. Cool on a cooling rack until cool! Then frost!

Frosting Steps:

  1. In a standing mixer, mix cream cheese, butter and sugar until well mixed.
  2. Add vanilla. Then mix it some more. Store until you want to use it! Or just begin frosting right away! Sorry, I didn’t get a picture of the finished cake.

This is seriously the best cake on the planet. I’m actually planning on making red velvet cupcakes with different flavors of cream cheese frosting. So I will probably post the trials here. Oh! And it’s for my sisters wedding. In a year.

    But I know some good ones in Downtown Montreal.
    There is Universel Dejeuner et Grillade
    La Belle et La Bouef
    And more.
