Blueberry Jello Meringue Pie

Self invented Blueberry Jello Meringue Pie! It took quite awhile for my mom and I to make this. We first didn’t have a recipe with us and second, we didn’t have enough blueberries. But hey, it worked.


2 cups bluberry

1 pack of blueberry jello powder

½ cup egg white

1 cup sugar

2 tbsp icing sugar

pre- made pie crust

½ cup water


1. Bake the pie crust at 350'C until it turns golden brown

2. Cut 1 cup of blueberries in halves

3. Crush 1 cup of bluberries

4. Mix the crushed blueberries with ½ cup of sugar

5. Mix the jello powder with the water, chill

6. Add the jello powder mixture with the blueberry mixture and the halved blueberries

7. Pour in the baked pie crust and refrigerate for a day

8. On the day when you eat it, beat the meringue till stiff peaks form

9. Gradually add in sugar and icing sugar and whip until smooth

10. Add onto pie and torch the meringue

Requires a bit of time to make but tastes so good! And it’s really different than most pies. I’ve never had a pie that used jello… And you can always adjust the taste by adding more or less sugar!
