Every sub-temple at Sensō-ji has its own kagamimochi, a traditional Japanese New Year decoration. It usually consists of two round mochi (rice cakes) and a daidai (a Japanese bitter orange) with an attached leaf on top.

Amethyst- A surprisingly subtle Lavender cream limoncello, crushed blueberries with vanilla Ice-cream and cookie sprinkles with a Licorice whip. Eh? Ehhhh? EHHHH?
Pearl- Peach jelly at the bottom of pear vodka, citrus sou-ju, sprite, and peach juice. A speared pineapple spear chaser. (Can’t even get over these puns yo.)
Garnet’s chocolate pomegranate infusion is chocolate sauce, itallian pomegranate soda, a homemade pomegranate syrup with pom vodka, and a cream made with chocolate liquor, heavy cream, and the juice from a bottle of cherries for color mixed together and poured on top. Orange bitters smooths it all out.
And the favorite is a rose water strawberry lemonade with lychee liquor, lychee calpico, and homemade strawberry syrup. That on top is a lychee with mint leaves.

1 oz. dried Juniper Berries, crushed
1 oz. Mugwort, crumbled
1 oz. Bitter Orange Peel, chopped
½ oz. dried Damiana leaf, crumbled
6 tsp. yeast nutrient
4 tsp. Acid Blend (Citric, Malic, and Tartaric acids)
1 pkt. (5 grams) Red Star Pasteur Champagne yeast (rehydrated)
Honey and three gallons of water brought to boil. Must be boiled 30 minutes, then removed from heat.
Herbs (tea, juniper, mugwort, orange peel and damiana) in muslin bag added to hot mix and steeped for 30 minutes.
Must be cooled and yeast pitched.

SINCE THEY WERE REARED IN ANCIENT SOUTHEAST ASIA, AROUND 300 VARIETIES OF ORANGES WERE BREED AND INTRODUCED FOR CONSUMPTION. THERE ARE BITTER AND SWEET VARIETIES OF ORANGES, BITTER BEING USED FOR ORANGE JUICE WHILE THE SWEET FOR TRADITIONAL CONSUMPTION.
