Vegan Chocolate Peanut Butter Energy Bites

These energy bites are SO amazing!  I really needed something quick to eat at work on one of my short breaks but didn’t want something super filling like a protein bar. So, I did some looking online at different energy bite recipes and decided to do some experimenting. After my second attempt and some tweaking I came up with this!  And they are so good! My coworkers tried them and loved them! There’s about 110 calories and 5 grams of protein per bite. They definitely curb my sweet tooth without completely killing my day like a bunch of Oreos would! Here’s the recipe:

Ingredients:

  • 1 cup crunchy peanut butter (could use creamy but I liked the extra crunch in these)
  • 4 (possibly 5) tablespoons agave (or honey)
  • 1 cup old fashioned oats
  • 4 tablespoons flaxseed meal
  • 2 scoops chocolate protein powder (I used the vegan brand Vega)
  • Vegan chocolate chips 

Method:

Mix the oats, flaxseed, protein powder and chocolate chips together in a bowl. Next mix the peanut butter and agave in a seperate bowl. Pour the dry ingredients into the peanut butter/agave mixture. You’ll have to have some patience at this point to get everything mixed together really well. If you feel like it’s not going to stick together well enough, add about another tablespoon or so of agave and it should stick together.  Finally, form portions of the mixture into balls. I did about enough in each to make a large bite sized ball and it came out to 22.
