CRANBERRY COCONUT BANANA BREAD SLICE

- 160g flour (I used a mix of oat and sorghum flours)
- 1 tsp baking powder
- 1 Tbsp coconut flour
- ½ Tbsp chia seeds soaked in 3 Tbsp water to make a gel
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp ground ginger
- pinch of nutmeg
- 2 Tbsp Natvia natural sweetener (or coconut sugar)
- 2 ripe bananas mashed
- ½ cup frozen cranberries
- ½ cup water

1. Preheat the oven to 180 degrees celcius and line your loaf/slice tin with baking paper

2. Combine flours, spices, sweetener and baking powder

3. In a separate bowl mix together banana, vanilla, chia gel and water

4. Stir together wet and dry ingredients so everything is evenly combined. Fold in berries

5. Pour into tin and sprinkle with shredded coconut. Then bake in the oven for around 30 minutes or until golden

6. Let it cool a bit before transferring to a wire rack and slicing!

So delicious warm or cold, especially with sliced banana and almond butter/maple syrup!
