This recipe is honestly the greatest thing ever and super easy to make. Often when I’m feeling really awful all I want is something hot, delicious, filling and comforting, and this fits the bill for me perfectly. Also - it’s super customisable (I’ve included a vegetarian version) and relies on ingredients that are pretty cheap. I use a microwave in this recipe and so it only takes about fifteen minutes, and this quantity is what I’d cook for dinner for one.
Three medium potatoes
Two rashers of bacon OR a can of kidney beans
A handful of grated cheese
Optional but extra delicious: sauces of your choosing (tomato, hummus, BBQ, aioli, sour cream…), half an avocado
Get a saucepan and put it over a hot flame with a bit of butter to melt.
Wash your potatoes and prick them each with a fork about five times. Put them in the microwave for five minutes on a paper towel.
Chop up the tomato and season with salt and pepper. Chop up the bacon or rinse the can of kidney beans.
Add tomato and bacon/beans to the pan, stirring occasionally.
When the potatoes are done, turn them over on the paper towel with tongs (careful cos they’re hot!) and microwave for a further five minutes.
When the potatoes are done, take them out and put them on a microwave-safe plate. Slice in half and put a dob of butter in the middle of each one, and add salt and pepper.
Take the bacon/beans and tomato and artfully arrange them on top of the potatoes (i.e. dump them on top). Top this unholy mess with your grated cheese.
Put your plate in the microwave and cook for about forty seconds to a minute, or until the cheese is melted.
Enjoy! Optional deliciousness: top with some sliced avocado and/or a sauce of your choosing. I love adding sour cream to mine!
