Colorful lunches are my favorite kinds of lunches!!!🙈
Whole wheat Tuscan bread toasted
On the left: ¼ avocado, lemon juice,salt, pepper, & tomato
On the right: carrot/siracha/apricot hummus & baby spinach
Added some strawberries for a bit of sweetness and it was oh so freaking good!!! 😍
I think this salad is the closest one I know to having the right balance of macro-nutrients - plus it’s delicious!
250g punnet of strawberries
½ bunch mint
90g (½ block) haloumi
2 small 125g cans of chick peas
Baby spinach leaves
Combine the spinach, mint, strawberries and chick peas. Lay the sliced avocado over the top. Quickly cook the haloumi on a pan over low-medium heat until soft and golden (approximately 2 minutes). Slice the haloumi while it’s still warm and place it on top of the salad. Squeeze lemon juice over the haloumi and avocado and serve. This will be substantial enough for a meal for two.
I also really enjoy this without the haloumi and avocado. The strawberries, chick peas, mint and spinach are just such a winning combo.
so i had a dream that there was a dhmis au where they were all tiny childs and lived in a house made of ice in the desert. (ok that part’s a little weird) I got to listen to some rad conversations like:

I felt slightly obligated to post this to tumblr. Bai fruit drink (dragonfruit flavor) only has 10 cals in one bottle. Pickles are 0 calories. There are only 25 calories in organic-girl nutritional powerhouse salad (kale and baby spinach etc). I am rly happy right now!!!😁😜
I have tried the Bai coconut drink it is tasty! I love snacking on pickles too they are great!!!
High-Protein Vegan Lunch! Actually I didn’t even plan this, I just got curious afterwards. 😅 Those patties contain 40 g protein. Fava Bean Groats (that contain also pea protein) are 46% protein, so 60 g (1 dl) = 27.6 g protein. I also used 20 g frozen spinach and 15 g gluten flour and some breadcrumbs.
With vegan patties: Sweet Potato Coins & Corn. Grated Red Cabbage, Goji Berries, Courgette Cubes, Baby Spinach and Avocado Dip. ☺
