Quick n Healthy!
1 Avocado
1 Yellow Pepper
1 Roma Tomato
4 Little Cocktail Tomatos
1 Buffalo Mozzarella

Salad Sauce - Mix it up!
100 ml of freshly squeezed orange juice
50 ml of freshly squeezed lime juice
Salt, Pepper & Chilli Pepper
3 Tbl Olive Oil
1 Tbl honey

Mina’s Tipp: Let half of the orange sauce thicken slightly for about 5 minutes before you add the rest of the sauce incredients!!

Dinner and a movie on a lazy Sunday night. I picked up sushi (with brown rice) from the store, and made a quick tomato-cucumber-avocado salad.
Dressing was half a lime, a few drops sesame oil, 2 spoons olive oil, a little less red wine vinegar, salt, sriracha, and a splash of water. It was so good and light!
Enjoyed with kettle corn while I watched the last 5 years on Netflix 😎
