I usually toss this on pasta, but turns out your basic vinaigrette dressing is:
- 1 or 2 parts oil
- 1 part acid
My recipe tends to be:
- Canola oil
- Rice vinegar
- Parsley and dill
- Chipotle pepper
- Salt and pepper
But you can replace anything at all on the lists with anything else! Heat and aromatics can also be combined if you’re fond of garlic, and you can omit a super hot heat all together if you don’t like spice.
It's delicious, takes no time at all, and turns basic pasta into something I want to eat a giant bowl of.
(I tend to mix it with rotini, bacon, and black olives. It tastes like store bought pasta salad, but better)
