Daal Baati Churma - traditional Rajasthani dish !! made with multi-grain flour & olive oil, cooked on charcoal grill, served with mixed panchmel daal, fire-roasted aloo bharta, smoked green chillies, cilantro & mint chutney.

Ingredients

  • 150g pack medium egg noodles
  • 2 tbsp vegetable oil (I used olive oil)
  • 1 pound shrimp
  • 1 tbsp lemon juice
  • Small piece of fresh ginger, finely chopped
  • 4 garlic cloves, finely chopped
  • ½ large carrot, cubed
  • ½ green pepper, cubed
  • Other vegetables if you choose (I added mushrooms, zucchini and red pepper)
  • 2 scallions, finely chopped
  • 2 tbsp soy sauce
  • ½ tsp sesame oil (optional)
  • 1 tsp Sriracha sauce (optional)

Preparation

  • Cook the noodles according to package instructions.
  • Meanwhile, add 1 tbsp of olive oil into a frying pan. Add shrimp, lemon juice and 2 chopped cloves of garlic. Cook until shrimp are pink and cooked through. Set aside.
  • Heat the oil in a large frying pan, then stir-fry the ginger, garlic, scallions, carrot, pepper and other vegetables for 2-3 mins until cooked.
  • Drain the noodles thoroughly and add to the pan. Stir-fry for 2 mins.
  • Add the soy sauce, sesame oil and shrimp, stir into the pan, and cook for an additional 1-2 min.
  • Top with Sriracha sauce if desired.
