Amazing lunch 😍😋 stewed vegetables with brown basmati rice and green onions. Inspired by @frommybowl! My boyfriend and I made a huge batch this last night and have soooo many leftovers, it’s a great meal prep dish and is so delicious!
I didn’t measure the amounts of each veggie I added so I don’t have an exact recipe, but you don’t even really need one! You can add pretty much whatever you want and it’ll be good.
Basically what I did was sauté chopped onion and garlic in a large saucepan on the stove until they started to brown. Then added tons of veggies; I did carrots, potato, bell pepper, 1 can of kidney & cannelloni beans (drain first), and frozen peas and corn. Mix all the veggies together and add a 28 oz can of fire roasted diced tomatoes, do not drain! (or a 14.5 oz can if you want to make less). I also added some veggie broth to just cover all the veggies with liquid. Bring to a simmer and cook for 45 minutes to an hour, or whenever it gets to the consistency you want, and stir occasionally. While simmering I seasoned the stew with dried basil, oregano, Rosemary, parsley, cracked pepper, and sea salt. It came out perfect! I hope this recipe wasn’t too terrible to read in paragraph form 😅 Enjoy!
70 g brown rice 60 g beluga lentils 100 g smoked tofu, cubed 1 small carrot, diced 1 tbsp tomato paste spices: paprika, chili, salt, pepper, herbs of choice or just vegetable broth
How to: cook the brown rice. meanwhile also cook the lentils in another pot. at the half of the time add the tofu, carrot, tomato paste and spices. also add some more water. cook everything until ready and serve! :)
Tip: The lentil stew tastes amazing if you first pan-frie some diced onion and garlic in olive oil and deglace them with some red wine (vegan of course) before adding the other ingredients and cook as mentioned above. there won’t be any alcohol left after cooking it :)
It doesn’t feel like I post much artwork often due to school n work, but I DO sketch quite a lot. I’m trying to maintain a digital sketchbook and sketch more before doing projects.
