Breakfast was a bowl of GoLean Kashi Chocolate Crunch cereal with unsweetened vanilla silk almond milk (I usually use sweetened), topped with half a banana sliced into coins. I also had a small handful of red grapes and a small bowl of Kind Cinnamon Flax Granola with the other half of the banana.

tbf i used to absolutely hate almond milk but then our local store started selling silk brand and then we got a WALMART that always has it and the sweetened tastes like melted ice cream?? and the light sweetened, which i usually drink, is honestly just as good? im not trying unsweetened bc at that point i will literally just eat almonds with a glass of water

but yeah my lactose intolerance issues are almost nonexistent now that i can drink a milk substitute that doesnt taste like garbage dirt water

I typically have eggs for breakfast, but when I saw the pineapple on the counter this morning I just had to cut it up and eat it! It’s sooooo good!

Greek yogurt, granola, pineapple, and banana. Oh, and Silk chocolate almond milk is my favorite thing right now. If you like chocolate Silk, it tastes exactly like that.

I did just over a mile on both the treadmill and elliptical, and gradually increased resistance on the other two machines. I was a dumbass though cuz I forgot to bring water with me lol. I’m for sure going to make a habit of going, but I think I’ll only be able to go on Tuesdays because of my school schedule. Today was a really good day overall for me. I woke up feeling well rested and refreshed, I got to school early, therapy went well, the gym happened, and I planned out all of my meals last night so there was no stress in preparing them for today! Today was good, so good.

Sweet Almond Cinnamon Rolls with Roasted Strawberry Glaze 

What says summer more than fresh strawberries?! However, I knew that I couldn’t make just any ol’ cinnamon rolls. I had to find a way to make them special, and these are special. and delicious. and buttery. and just, freaking amazing. I used my own cinnamon roll recipe with some tweaks, and these came out perfectly. The roasted strawberries give an unreal strawberry flavor, mixed with the warmness of the cinnamon and nutmeg in the dough. Just perfect

Ingredients for Dough 

4 cups all purpose flour 

2 tsp nutmeg

1 cup Silk almond milk + ¼ cup water, warmed to 110 degrees Fahrenheit 

1 package active dry yeast 

1 egg, room temperature 

¼ cup + 1 tsp granulated sugar 

¼ cup unsalted butter, softened 

¼ tsp vanilla extract 

1 tsp salt 

Directions for Dough 

Oil a large bowl and set aside. 

In a large bowl or stand mixer fitted with dough hooks, combine all of the dry ingredients.

In a small bowl or mixing cup, mix the warm water and warm almond milk together. Add in the egg and vanilla and whisk. 

Sprinkle over the yeast and wait for it to activate (about 3 minutes). 

NOTE: If the liquids are too cold, the yeast won’t activate. If the liquids are too ht, they will kill the yeast.

Gently begin to mix the dry ingredients together while slowly adding in the wet ingredients. 

Once the wet ingredients are incorporated, add in the butter in increments until combined.

Let the mixer knead the dough for 8-10 minutes, until smooth.

Pull the dough together with your hands and place into the oil bowl, ensuring that all sides are oiled (so a crust does not form). 

Let rise, covered, in a dark, warm spot for 1 - 1 ½ hours 

Ingredients for Roasted Strawberries 

½ cup strawberries, sliced in half 

2 tbsp balsamic vinegar 

Directions 

Preheat the oven to 400 degrees Fahrenheit.

In a small baking dish lined with parchment paper, spread the strawberries in a single layer and drizzle with balsamic vinegar. 

Roast for 15-20 minutes or until softened completely. 

Once roasted, let cool before pureeing. 

Once cooled, puree and set aside. 

Ingredients for Filling 

1 cup sliced almonds, roughly chopped in food processor 

1/3 cup unsalted butter, softened 

1 tbsp ground cinnamon 

¾ cup brown sugar

¼ cup Turbinado (Demerara) sugar 

2 tbsp melted butter 

Directions 

Butter/grease a 9x13 inch baking dish or line the baking dish with parchment paper and set aside. 

Once the dough has risen, remove from the oiled bowl and place onto a well-floured surface. 

Roll  the dough until it is about a 15x9 inch rectangle – slightly larger than your baking dish.

Smear the softened butter onto the dough. 

Combine the ingredients for the filling except the almonds and sprinkle on top of the dough, covering every place where there is butter. 

Pat the filing into the dough using the palm of your hand.

Repeat the previous steps with the almonds. 

Starting from the long end, roll the dough similar to a jelly roll, making sure to press the seams of dough together once you have finished rolling. 

If you want, cut the end bits off of the dough log. 

You should be able to get 16 small cinnamon rolls or 8 large cinnamon rolls from the dough. 

Place the rolls cut side down in the baking dish, cover and let rise again for 45 minutes. 

Preheat the oven to 350 degrees Fahrenheit. 

When the cinnamon rolls have risen once again, brush the melted butter on the top of the rolls and bake uncovered for 30-35 minutes or until golden brown. 

Ingredients for Glaze 

3 oz cream cheese, softened 

¼ cup warm almond milk 

2 cups powdered sugar 

Roasted strawberry puree 

Directions 

About 5-10 minutes before the cinnamon rolls are done baking, make the glaze by combining all ingredients except the warm milk into a bowl.

NOTE: the amount of powdered sugar used will vary depending on how sweet you’d prefer the glaze. 

Combine the ingredients and mix until the desired consistency is reached. For a thicker glaze, add less almond milk. For a runnier glaze, add more milk.

When the cinnamon rolls are done baking, let them cool for a few minutes and immediately drizzle on the glaze. 

Serve while warm.

Lemon Blueberry Sweet Rolls with Lemon Vanilla Glaze

I felt like celebrating the arrival of spring and what better way than to take advantage of the spring fruit! These are to die for, and you can see the lemon zest all throughout the dough. How amazing! They are bright and fresh, and anyone you make these for will love you.

Ingredients for Dough

4 cups all-purpose flour

¾  cup + 2  tbsp Silk Almond milk

¼ cup + 2 tsp sugar

¼ cup warm water

1 package active dry yeast

1 egg

¼ cup Earth Balance original spread, melted (or regular melted butter)

¼ tsp vanilla extract

1 tsp salt

Ingredients for Filling

½ Stick butter, softened or melted

½ cup + 2 tbsp sugar

Zest from 1 lemon

1 cup blueberries

Ingredients For Glaze

Juice of 1 lemon

Zest of 1 ½ lemon

3 cups powdered sugar

1 cup almond milk

Sprinkle of salt

2 tsp pure vanilla extract

Directions for Dough

Oil a large bowl and set aside

In a small bowl, mix 1 tsp in warm water. Sprinkle over yeast and wait for it to activate. If water is too cold, yeast won’t activate. If water is too hot, it will kill the yeast.

In a medium to large bowl,combine all dry ingredients and set aside

In a standing mixer fitted with dough hooks (or a large bowl) combine wet ingredients except vanilla and half of the dry mixture

Add yeast and vanilla and remaining dry ingredients

Let mixer go, or knead by hand, for about 7-9 minutes or until smooth dough forms

Pull dough together with hands and place in oiled bowl ensuring that all sides of dough are oiled (so a crust does not form)

Let rise, covered, in a warm spot for 1 ½ - 2 hours

Directions for Filling 

Butter/grease a 9x13 inch baking dish OR use line the baking dish with parchment paper and set aside

Once dough has risen, removed from oiled bowl and place on a well-floured surface

Roll dough until it is about a 15x9 inch rectangle - slightly larger than your baking dish

Smear the softened spread on the dough. Combine the sugar and lemon zest until you have a nice lemon sugar and sprinkle on top of dough leaving about a 1 inch border

Scatter the blueberries on top of the dough in a single layer

Starting from the long end, roll the dough like a jelly roll

If you want, cut the end bits off of the dough log

You should be able to about 14-18 small rolls out of the dough log

Place rolls cut side down in the baking dish, cover and let rise again for 45 minutes to a 1 hour.

{the rolls will fill out the pan once they have risen}

Preheat oven to 375 degrees Fahrenheit

When rolls have risen again, bake for about 15 minutes or until the rolls are golden brown

Directions for Glaze

Combine lemon zest, lemon juice, and vanilla in a large bowl and mix. Add in the powdered sugar and slowly begin to add the milk until you reach a runny consistency

When the rolls are done baking, immediately pour the glaze on top

Serve and enjoy!

Steps
1. Place a fair amount of honey on a spoon
2. Place a drop or two of milk on the honey
3. Sprinkle a little bit of sugar on the mixture
4. Consume
5. Got to bed

My turmeric post-workout smoothie usually consists of:

1 1/2 cups of hemp milk (Pacific brand) or almond milk (Silk brand)

1 cup of spinach (or any greens of your choice)

1 cup of kale

½ cup of fresh berries (or any fresh fruit of your choice)

1 pear

½ avocado

1 teaspoon of turmeric

1 tablespoon of Flax Oil or Chia Seeds (or any health boost of your choice)

  • tortilla with hummus and turkey

Post-workout:

Green Tea Chia Smoothie Recipe

(Vegan, Dairy-free, Clean-Eating)

Ingredients
  • 1½ cups Silk Unsweetened Almond Milk (Original or Vanilla)
  • 1 medium banana, sliced (frozen or not)
  • ½ tsp matcha (green tea powder)
  • 1 scoop (45ml) stevia extract powder*
Instructions
  1. Add ingredients to blender in order of appearance, then pulse until smooth.
  2. If bananas are not frozen you may like to add a couple ice cubes.
  3. Allow to sit a minute before drinking so the chia can start to thicken.
Notes*if using a stevia erythritol blend (ie. Truvia or Swerve) use a single serve packet
