Whenever a service we use gets bought by another company, we’re always filled with hope and anxiety over its fate. It could either be a case of growth and improvements or a slow dwindling descent into irrelevance. Orange Chicken

500g and sliced it into smaller pieces - 1 x 2 inches strips. (Half kilo is good for 4-5 people)

1 large - egg

1 ½ tsp - salt

1 tbsp - oil

¼ cup - four

½ cup - cornstarch (coating)

1 tsp - minced garlic (optional *I used 3 cloves)

2 tbsp - rice wine (optional)

2 tbsp - cornstarch (sauce)

1 tbsp - oil

** Set to simmer

3 tbsp - soy sauce

3 tbsp - water

10 tbsp - sugar

1 tbsp - oil

7 tbsp - white vinegar (you can try to add lemon on the mix or substitute vinegar with orange juice)

1) Cut chicken pieces into 2 inch squares and place in a large bowl (I prefer smaller servings, so I did 1x1 in cubes instead. Though I thought 1 x 2 inches strips might be better next time)

2) Stir in egg, salt, pepper, and 1 tablespoon oil and mix well.

3) Stir cornstarch and flour together. Then, add chicken pieces, stirring to coat.

4) Heat oil for deep frying in wok or deep fryer to 190 Celsius

5) Add chicken pieces, small batch at a time, fry 3 to 4 minutes or until golden brown.

6) Remove chicken from oil with slotted spoon and drain on paper towels

7) Set aside. Clean won or get another pan and heat 15 sec. over high heat.

8) Add 1 tablespoon of oil, garlic and 2 tbsp corn starch, rice wine, Simmer and stir for about 10  sec or until mix is slightly thickened

9) Add all remaining ingredients for sauce until mixture is even. Add chicken and still in 1 tbsp of oil.

Notes: I did a few adjustments from the original recipe. I made the slices smaller, doubled the amount of sauce and added the chicken last too instead of the sauce. I’ll probably try the orange juice next time :)
