Busy week at work, and now it’s time to cook up a few things for the week ahead. So here’s a new kind of triple decker. Start with a wild sockeye salmon cake made with #kale, green onion, whole wheat #panko, #flaxseeds and a little sunflower lecithin, top with roasted #carrot, butternut #squash and basil quinoa, then finish with a little mashed avocado. This #salmon #cake is meh (my burgers from two weeks ago kind of blow it away). Mixed in with the other flavors it all works and tastes yum - hence the short stack. I’m eating this one, we’ll see what the little guy thinks of this tomorrow at lunch.
