So much cacao!
We are psyched to report that cacao production levels this year in Belize are sky-high (relatively). The farmers we’re working with are producing a significant amount more this year than last year. We have a hunch that the work our extension officers did helping farmers with pruning over the summer has helped!
Above is a shot of Toribio Coc, our Quality Control lead, sorting through fermented and dried cacao before bagging. If it’s not a perfect bean, it doesn’t make it into the sack. Good beans make good chocolate.
