Summary: She has a huge crush on Negan and would do anything to make him happy. He misses the taste of real pumpkin pie, so she sets out to make it for him.

“How about a Negan one shot where the reader found out what kind of food was Negan’s favorite, so she goes out to find the ingredients, succeeds and makes it, but he finds out that she went outside the walls and flips his shit. Fluff with some delicious Negan kisses?” 

I don’t know why I picked pumpkin pie. I’m kind of one of those people who goes crazy over it in the fall, and I feel like Negan would like it too. This is just super fluffy and yummy. Hope you guys enjoy!

Vegan Pumpkin Spice French Toast

Ingredients:

  • 4 slices of thick bread or toast
  • ¾ cup dairy free milk (I used soy)
  • 1 tsp pumpkin pie spice
  • 2 tbsp flour (I used chickpea)
  • 1 tbsp maple syrup
  • 1 pinch of salt
  • 2 tbsp pumpkin puree
  • 1 tbsp vegan butter for frying
  • 1 tsp pumpkin pie spice for garnishing (optional)
  • 1 tbsp sugar for garnishing (optional)

Directions:

1. Slice your bread into equal strips and set aside.

2. Combine the remaining ingredients in a wide bowl and whisk well.

3. Melt butter in a large pan. Quickly dip the toast slices into your batter. Do not soak! Then transfer the battered slices to your heated pan and fry each side until crust has formed (about 2 minutes on each side).

4. Once all slices have finished you can roll them into a sugar mixture (optional) and serve with maple syrup. Enjoy!

How to make Pumpkin Pie Spice

It’s easy!

3 teaspoons of ground cinnamon
2 teaspoons of ground nutmeg
2 teaspoons of ground ginger
1 ½ teaspoons of ground cloves
1 ½ teaspoons of allspice (optional, I’ve seen and done it both ways tastes fine with or without it)

Put it all together and mix well.

Ta da! Instant pumpkin pie spice for baking or put a little in your coffee.

Also tastes really good on pork chops.

America: Who would recognize the smell of nutmeg, anyways?

Canada: I would.

America:… nutmeg? Really? 

Canada: Yeah.

MINI PUMPKIN PIES

Yield: 2 dozen

The things you’ll need

Ingredients

Dough
  • 2 ½ cup all purpose flour
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • ½ vanilla bean
  • ½ cup butter flavored shortening, chilled
  • ½ cup salted butter, chilled
  • 6 tablespoon buttermilk
Pumpkin Filling
  • 6 oz. cream cheese at room temperature
  • 1 ¼ cup pumpkin puree
  • ½ cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon sea salt
Whipped Cream
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
Decoration
  • Egg wash
  • Pastry brush
  • Decorating bag fitted with a #849 tip
  • Cinnamon for decoration
Equipment
  • Large mixing bowl
  • Mini tart pan
  • Plastic wrap
  • Round cookie cutter
  • Rolling pin
  • Baking sheet tray lined with parchment
  • Two medium mixing bowls
  • Hand mixer
  • Two rubber spatulas
  • Small ice cream scoop

Let’s get started!


Dough
  1. In a large bowl, combine flour, sugar, vanilla bean, and salt.
  2. Add cubed butter and shortening and work between fingers until the mixture resembles coarse meal. Drizzle in ice-cold buttermilk. Work in the buttermilk to form a dough.
  3. Form the dough into two discs and wrap tightly in plastic wrap and chill for 2 to 24 hours to set.
Filling
  1. Preheat oven to 350ºF.
  2. In a medium mixing bowl use a hand mixer to combine cream cheese and brown sugar until smooth. Add eggs one at a time, mixing between each addition and scrape down the sides as necessary.
  3. Add pumpkin, spices, salt and vanilla extract and beat until smooth.
  4. When dough is set, roll out to 1/8 an inch thick and cut circles out using the round cookie cutter. Line dough rounds into each tart pan.
  5. Use a fork to prick the bottom of the crust then brush egg wash on the tops of each cup. Scoop filling into each pie cavity almost to the top, almost 2 tablespoons.
  6. Bake for 12-15 minutes. Allow to fully cool before adding topping.
  7. In a medium mixing bowl, use a hand mixer to whip the heavy cream and sugar until stiff. Scoop into a decorating bag attached with a #849 tip.
  8. Sprinkle each pie with a bit of cinnamon. Ta-da! Mini pumpkin pies!

Vegan Pumpkin Spice Waffles

Ingredients

  • 2 cups of flour of your choice 

  • 1 tsp of baking soda 

  • 1 ½ tsp baking powder

  •  1 cup of non dairy milk 

  • 1 tbsp of applecidervinigar 

  • 1 tsp pumpkin pie spice

  •  1/2 tsp cinnamon 

  • ¼ cup coconut oil 

  • 3 tbsp brownsugar 
  • ¼ cup of pumpkin puree

Additional Optional Ingredients

  • maple syrup
  • pecans
  • dairy free whipcream
  • fruit of your choice
Directions
  1. Firstly mix your milk with the vinegar and set aside for 5 minutes.
  2. In a large mixing bowl, add your flour, baking soda, baking powder, spices and sugar. Mix the dry ingredients together. 
  3. Now add pumpkin puree and coconut oil to your non dairy milk and mix well. 
  4. After that, combine your dry and wet ingredients together and place into the fridge for 10 minutes. In the meantime, heat up your waffle iron.
  5. After 10 minutes, grease your iron and spoon about 3 tablespoons worth of batter on your waffle iron and bake for 2-5 minutes on medium-high heat.
  6. Now enjoy your waffles with whatever toppings you like!
