A bowl full of chocolatey overnight oats to fuel me through an exhausting (but awesome) day of work 👌🏼
Made this baby by soaking:
• ¾ cup oats
• @myjuss Endurance blend (cacao, maca, chia, ginseng)
• 1 cup rice milk
• 1 tbsp coconut sugar
• 1 tsp cacao powder
Topped it all off with some nana, berries, caramelised buckinis and maple syrup 🍌✨

🍫🍓🌟💯 RED VELVET SMOOTHIE BOWLS 💯🌟🍓️🍫 and guess what?! They’re made with veggies 😳 haha. Here’s the recipe:
For the base- 1 large Beetroot
1 tbsp cacao powder
2-3 medjool dates (if you like yours sweet add more)
A splash of water to blend
I also add maca powder to mine but that’s optional,

When Acai bowls are LIFE 🙌🏼💜 RECIPE:
🔹3 small frozen bananas
🔹1 cup frozen blackberries
🔹1 tsp @healthworkschef Acai powder
🔹1 tsp @mrm_usa maca powder
🔹splash coconut milk

Raw ‘kooka’ cookies by @panaceas_pantry ❤️ gluten free & refined sugar free!

Recipe: Makes 6
Biscuit
2/3 cup shredded coconut
2/3 cup raw cashews
2/3 cup almond meal
2 Tbsp + 2 tsp rice malt syrup
3 Tbsp coconut butter
½ tsp vanilla powder
2 Tbsp maca root powder

Chia Jam
½ cup frozen berries of choice (we used raspberries)
2 tsp rice malt syrup
2 tsp chia seeds
2 tsp lemon juice
1 tsp pure vanilla extract (if using vanilla powder add 1 tsp water)

Raw chocolate coating
¼ cup virgin coconut oil
1/3 cup raw cacao powder
2 Tbsp rice malt syrup
.
Instructions
For the biscuit
Combine the first 3 ingredients in a food processor and pulse until fine. Soften the coconut butter (to do this simply put the jar of coconut butter in hot water), once the butter is soft enough add the 3 Tbsp to the food processor, as well as your remaining ingredients and pulse until well combined. Squeeze/cut out your biscuits into your desired shape & set in the freezer.

For the chia jam
Combine all ingredients in a heavy based pot and cook on low heat for around 5 minutes, or until thickened (stir through out, to avoid burning). Turn off the heat and leave the jam to set and thicken, making the raw chocolate in the meantime.

For the raw chocolate
Melt your coconut oil over a low heat and combine with your cacao and rice malt syrup, whisking in a bowl to combine evenly.

To ensemble;
Dip half (3) of your biscuits in your raw chocolate, covering them completely. Set aside in the freezer to firm. Spoon your chia jam onto your chocolate coated biscuits and stick your plain biscuit on top, squeezing together. Allow your biscuit to completely soften before eating. Enjoy! #letscookvegan

RASPBERRY CHEESECAKE TARTS by @putyourheartinit 💖
 
Recipe:
Ingredients
crust
1 cup almond flour
1 tbsp coconut oil
¼ tsp psyllium
pinch of salt
a few drops ow water
 
filling
1 cup cashews soaked in water for 5-12 hours
4 tbsp water
3 tbsp coconut oil melted
3 tbsp cacao butter melted
4 tbsp chilled full fat coconut cream
1 cup raspberries
2-3 tbsp maple syrup
1 tbsp lucuma powder
1 tbsp maca powder
1 tsp lechitin
¼ tsp vanilla bean powder
.
gelee
¼ cup water 1 tbsp agar-agar
2/3 cup raspberries
1 tbsp maple syrup
.
topping
¼ cup chilled full fat coconut cream
½ cup oat cream whipped
¼ tsp vanilla bean powder
1 tbsp maple syrup
2 tbsp lucuma powder
.
How to make: 
1. For the crust mix everything together and press into baking mould
 
2. Making the filling add the ingredients in the same order they appear in the recipe. Add one ingredient at a time and blend in a high speed blender until everything is mixed to a smooth finish.
 
3. For the glee/jelly add the agar-agar to the water first and follow the instruction on the package! After that add the berries (blended into puree) and syrup.
 
4. Preparing the topping whisk the oat cream first then add the coconut cream and keep on whisking a little. Add the rest of ingredients.
 
5. You can add the filling straight to the crust then put the tarts into fridge.
6. Before pouring the gelee on top of the filling let it cool down a bit.
7. For the topping use an extruder for whipped cream or just simply spoon the cream on top of the tarts.
8. Garnish the tarts with edible flowers  if you can get your hands on them like I did. Otherwise you can just use raspberries and some lemon balms. Explore the inner aesthete in you! Enjoy! #letscookvegan
