Taking a bit of inspiration from our host of “Tomato Happy Hour”Kathleen Henderson.  I decided to try my hand at Baked “Fried” Green Tomatoes.  So easy and delicious.  Be sure to check out Kathleen on “Tomato Happy Hour” starting June 24.  You are sure to find her creating something wonderful with green tomatoes.

2 large green tomatoes
1 egg
½ cup milk
¼ teaspoon hot sauce
½ teaspoon salt
½ teaspoon pepper
½ cup cornmeal
¼ cup flour
1 teaspoon cajun seasoning
2 tablespoons grated parmesan cheese
Olive oil spray


Preheat the oven to 400 degrees.
Combine the egg, milk, hot sauce, ¼ teaspoon salt and ¼ teaspoon pepper in a bowl and whisk.  In another bowl, combine cornmeal, flour, Cajun seasoning, Parmesan cheese, ¼ teaspoon salt and ¼ teaspoon pepper.  Line a baking sheet with foil and place a cooling rack on top of the foil.  Dip the tomato slices into the egg mixture and then into the cornmeal mixture. Place the breaded slices on the cooling rack. Spray the tomato slices with olive oil spray and bake for 20 to 25 minutes.  Remove from the oven and enjoy.
