This dish, which we made last week for the Chefs for Kids’ Cancer event, featured a silky puree of turnips and rutabaga from Alex Paffenroth’s stand. It also was topped with wonderfully nutty sunflower greens from @windfallfarms. Totally market-inspired and tasty. There are always a few stands selling pears and apples at the market. My favorite? Hands down Locust Grove. They always have a different kind of apple or pear. There is a steady stream of apples I seem to have never tasted. Juicy. Tart. Sweet. Yeasty. You name it. Here is another take on Kohlrabi from Alex Paffenroth. I refer to him as the pope of the greenmarket because his stand is so bountiful and because he is always growing something new. I love his kohlrabi too. Juicy, rich with cabbage and turnip notes and the leaves are tasty too. Show winter vegetables some love. Can you feel the heat coming off this pan of Japanese (Tokyo) turnips? I love to pan roast root vegetables in the winter.
