I know NPCs explain events to Link for expository reasons, even if he either was most likely or 100% certainly was present for the events discussed, but the number of watsonian explanations as to why all have multiple shades of amusing.
The first possible one is that after having Amnesia once, people just ere on the side caution for reminding Link, which can be anywhere between endearing or low key a dick move.
Another is simply an extrapolation of the major Tony Hawk effect he's been experiencing. Like... people genuinely forget when Link is present for events. Symin tells Link "Did you know Zelda built this school?" The man is practically glued to the woman. He follows her around like he's her body guard or something. But in the back of everyone's memories they just see
Even when they know and recognize Link they just have a habit of forgetting about him.
