My mom meal planned kinda obsessively, and like I get why she'd get migrains too just not as regularily so any day she could be out for the count by dinner, so having a plan, plus easily excessable recipes helped us make dinner when she couldn't. That being said the fact that I don't know how to shop without a plan is becoming a problem...
I effectively buy two proteins, two to three veg, and potatoes then mix and match during the week. I also keep rice and other staples on hand. Occasionally I'll plan specific meals.
