answer to a one of those ‘i didnt think about this until i was taught it in college and now i cant remember what i thought it was’ questions: grasses do flower, but because they’re wind pollenated, they look very different in structure and are a lot more subtle than insect pollenated flowers (although there are grasses that exist that are insect pollenated with more traditional flashy flowers). the anatomy looks like this:

that being said, there are wind-pollenated flowers that aren’t grasses that look different:
this one is an example of wind pollination in a pine tree (which is common for gymnosperms, aka plants that don’t flower but have seeds, including pines, which is where pine cones come into play):
