rosemary vanilla cookies! (my own recipe)
trust me when I say these cookies FUCK
So I made this shit up after trying to make different cookies, panicking, and adding random amounts of each ingredient + random other ingredients + missing several ingredients- it sounds bad but trust me when I say they're some of the best cookies I've ever had in my life
I've made them several times, so the recipe is pretty foolproof!! They're vanilla and rosemary flavoured ((:
Ingredients: 200g butter, softened 1/2 cup white sugar 1 1/4 cup plain flour (feel free to add a little more if the mix looks too wet!!) 1/4 teaspoon vanilla essence (can add more but be careful not to add too much) as much rosemary as you think is good! I usually go for 1/2 a tablespoon (: a sprinkle of cinnamon is also nice to add!
- Preheat oven to 180 degrees celcius. Line a baking tray with baking paper.
- Cream butter and sugar until light and fluffy. sift flour, stir into mixture. Fold in rosemary and vanilla essence (and cinnamon if you're adding any!)
- roll into balls about 3cm in diameter (makes pretty large ones) and place on baking tray (make sure theres space between each ball because they spread out)
- get a fork and flatten those fuckers until they're about a centimetre thick (:<
- bake for around 15 minutes until slightly golden at the edges!! :D
- remove from the oven safely and leave to cool on a cooling rack
Makes around 20!
If you've done it right, they should be mostly firmly packed, slightly crumbly, nicely sugary but not too sweet- think a cross between shortbread and chocolate chip cookies!! PLEASE try and make these if you can, you won't regret it! I've received extremely positive feedback from family and friends and these cookies disappear at an alarming rate from the fridge sdhfjfsdhjs
