What You Need:
Vegetables:
- Eggplant
- Zucchini
- Tomato
Vinaigrette:
- 1 TBL sherry vinegar
- 3 TBL olive oil
- 1 tsp honey
- 1 tsp brown mustard
The rest:
- Tomato sauce
- Salt+Pepper
- Herbs de Provence or other dried herbs
- Slice zucchini, eggplant, and tomatoes into 1/8 inch slices. Set zucchini and tomatoes aside. In a small mason jar, place vinegar, olive oil, honey, and brown mustard. Lid up and shake to combine. Set aside.
- Place eggplant on a drying rack and lightly season with kosher salt. After half an hour, flip, and season the other side. Allow to sit for another half hour. Squeeze excess liquid from the eggplant. Set aside with the rest of your sliced veggies.
- Lightly grease up a carbon steel or cast iron pan. Ladle in a thin layer of tomato sauce and spread along the bottom of the pan. Should take about 1/4-1/3 cup depending on the size of your pan.
- Carefully fan your veggie slices along the edge of the pan working towards the center. You can arrange it in any order you like, but try to at least keep it consistent so that it cooks evenly. Brush with reserved vinaigrette, and season lightly with salt and pepper. Sprinkle on dried herbs of choice.
- Place pan in a 450 degree oven and cook for 10-25 minutes or until vegetables are lightly golden. Allow to cool slightly for about five minutes. Then, you can serve with more sauce and some crusty bread.
I made Swablu shaved ice from Pokemon Cafe Mix!
We made this shaved ice, or kakigori, using both shaved ice and ice cream, all without using an ice shaver or ice cream maker!
I was so excited when Pokemon Cafe Mix was announced - perhaps even moreso than Pokemon Snap 2! I’m obsessed with the official Pokemon Cafe restaurants in Japan, and even modeled my outfit based on their uniform. The idea of making Pokemon foods is so exciting to me, though I wish it was more of a baking game than a puzzle game. Still, the art style is adorable, and all the menu items are super cute, and I knew I had to make one!
The Swablu shaved ice is a delicious summer treat, though it doesn’t stay photogenic for long in the heat (as you can see)! You can totally make this dish at home without buying any special equipment - here’s how!
In this video, I devise a recipe for a steak that contains no meat: Shroom Steak. Which just so happens to be the height of Shroom cuisine. Here's how you make it. Watch it in action here.
Dry stuff:
- 1 1/4 cups vital wheat gluten
- 5 TBL chickpea flour
- 2 tsp grill seasoning, I use Montreal Steak Blend
- 1/2 cup Fried Shrooms, about half a recipe
Wet stuff:
- 1 TBL low sodium soy sauce
- 1 TBL Worcestershire sauce
- 1 TBL honey
- 1 tsp liquid smoke, I use applewood
- 2 tsp sherry vinegar
- 1 TBL gravy improver
- 2 tsp brown mustard
- 2 tsp anchovy paste
- 2/3 cup vegetarian beef broth
- Canola oil, as needed
- For dry stuff: In a food processor or Vitamix, combine vital wheat gluten, chickpea powder, onion powder, garlic powder, steak seasoning, and one recipe of fried shrooms. Pulse until blended. Set aside.
- In a measuring cup place soy sauce, Worcestershire sauce, honey, liquid smoke, brown mustard, anchovy paste, sherry vinegar, gravy improver, and hot broth of choice. Add liquid to dry stuff and pulse until a dough forms.
- Place dough on a dry surface and knead it until it’s slightly springy, about two minutes. Roll out dough into a half inch thick or so rectangle. Cut out steaks using a mushroom cookie cutter or freeform it with kitchen sheers. Reroll excess dough or save for another use.
- Wrap steaks in lightly oiled aluminum foil. Poke a few holes in the top and bottom. Steam for 20 minutes. Carefully remove from steam and allow to cool slightly.
- To grill steaks: brush steaks on both sides with a little oil or clarified butter. Sprinkle with your favorite steak seasoning blend. Cook on a super hot grill for about two minutes. You can weigh it down with a press if you like. Turn steaks 45 degrees and cook for two more minutes, covered. Flip, and cook another 2 minutes. Turn 45 degrees, cook another two minutes, then remove from heat.
- Serve hot and enjoy like you would any steak, I like it with a green salad.
The sweet rolls in Skyrim sure look tasty. Here's a real-life recipe for the Elder Scrolls dessert that makes an amazing breakfast bun. Watch it in action here.
Dough:
- 1/4 cup milk, room temp
- 3 TBL sugar
- 2 tsp yeast
- 1 egg, warm temp
- 1 cup bread flour
- Dash of nutmeg1/2 tsp salt
- 1/4 cup butter, room temp
Icing:
- 1 TBL cream cheese
- 1/2 TBL milk
- 3 TBL powdered sugar
- Cornstarch, as needed
- Place barely warm milk, sugar, and yeast in a small bowl. Allow to get foamy, about five minutes. Pour into a large bowl.
- Add egg, flour, vanilla, and nutmeg. Mix until just combined. Cover and allow to sit for 15 minutes. Add the salt and knead in the bowl until an elastic dough forms, about 5-8 minutes
- Using a dough scraper, carefully fold in the butter, 1/2 TBL at a time. Once the butter is added, form into a dough ball, cover, and allow to rise for about 2 hours or until doubled in size.
- Once doubled, lightly cornstarch a work surface. Pinch off small balls of dough and place into silicone molds so they are about 1/3 filled. If using metal molds, make sure to butter them first. Allow to rise until they double in size again.
- To bake: If using metal molds: Bake in 375 degree oven for 18 minutes or until golden and cooked through.
- If using silicone molds: cook in a 400 degree oven for 5 minutes, drop to 375 and cook for another 10-15 minutes. Remove from oven and allow to cool completely.
- For Icing: Cream together cream cheese, salt, and sugar until combined. Whisk in milk. Drizzle over cooled buns.
How to make a real-life version of the Movie Theater snack from Stardew Valley: Stardrop Sorbet. You won't need an ice cream maker to make this yummy frozen treat, just a handy dandy stick blender. Watch it in action here.
What you need:
- 1 lb red or concord grapes
- 1/2 lb blueberries
- 1 small fuji apple, grated
- 3 TBL water cup water
- 1 1/2 TBL lemon juice
- 3 TBL sugar
- 3 TBL corn syrup
- Pinch of salt
- Blue or purple gel color (optional)
- 1/4 cup greek yogurt
- In a medium pot, place fruit, water, lemon juice, sugar, corn syrup, and salt. Cover and bring to a boil. Once it’s boiling, drop to low and cook for about 20 minutes or until grapes start to give up their juices.
- Blend the mixture with a stick blender or regular blender until it’s just chunky. Run through a nut bag or cheesecloth to get all the pulp out. You should have about 2 cups of liquid. Allow to cool in the fridge completely. Add food coloring to make it purple if it’s not vibrant enough.
- Once cooled, whisk about 1/4 cup of your liquid with 1/4 cup greek yogurt. Then, add that mixture back to mix. Pour into a baking dish, a loaf pan works good. Freeze for 2 hours or so or until mostly frozen.
- Take the stick blender to it until it’s smooth, then put if back into the freezer. Do this every hour until you get a nice soft mixture. Then, you can store it wherever.
- To serve: Allow to come to room temp for about 2-4 minutes, scoop and serve.
In this video, I teach you how to make Fried Shroom from Paper Mario. The Tayce T. recipe makes a great side dish, but is also great as a base for other recipes...here's how you make it! Watch it action here.
What You Need:
- 1 lb. mushrooms, a mixture of oyster, cremini, or white (use whatever you have)
- 1 garlic clove, minced
- 2 TBL ghee or butter
- 1/4 cup water
- 3 TBL brandy or sherry
- Kosher Salt
- Black pepper, to taste
- Slice mushrooms into 1/4 inch or so slices. For woodier mushrooms, use scissors.
- Place a large sauté pan over high heat. Add mushrooms all at once, along with water, ghee or butter, garlic, and a pinch or two of salt. Bring to a boil, covered.
- Once a boil is achieved, remove the lid, and cook on high to allow liquid to evaporate. Once it has, continue cooking over medium-high heat until mushrooms are golden brown.
- When shrooms are golden brown, remove from the heat, add cognac, and light. Make sure you do this off the heat!
- Allow cognac to cook off then season to taste with salt and black pepper. Serve over rice or potatoes. Or….incorporate into other dishes…
How to make an edible version of Frozen Treat Set from Animal Crossing: New Horizons. Careful not to use it as furniture though, unlike the in game version it WILL MELT. Watch it in action here.
What You Need:
- 1/4 cup sweetened condensed milk
- 1 TBL milk
- Pinch of salt
- Scant 1/4 tsp blue drink mix, I like raspberry lemonade
- 1/2 cup heavy cream
- 1 drop blue gel color, optional
- In a small bowl, combine condensed milk, milk, salt and drink mix. Mix thoroughly until it thickens, that’s the citric acid reacting with the milk. Set aside.
- Whip cream to stiff peaks. Add a dollop or two of the whipped cream to the sweet milk mixture to lighten it. Add the mixture to the cream and lightly fold it in. You can add a little food color into it at this point if you want.
- Put mixture into your desired ice pop mold. I like silicone ones, but you can use whatever you like! Freeze for 30 minutes, put in popsicle sticks then freeze for another 2-4 hours.
- Serve straight from the freezer.
A real-life recipe for Creamy Heart Soup from Legend of Zelda Breath of the Wild. It's a soup...kind of. But! It is totally refreshing and a perfect summer dessert. Here's how you make it. Watch it in action here.

- Vanilla ice cream
- Slice a small watermelon in half. Using a melon baller, scoop out little balls and place in a small bowl. Set aside.

- After two hours, take out of the freezer and beat with a rolling pin to break up the frozen parts. Place back in the freezer. Repeat a few times until the mixture lightens in color.
- Pour vanilla ice cream into a heart-shaped mold and freeze hard.
- To assemble: place frozen watermelon slush in a bowl. Top with a half ring of watermelon balls. Finish with frozen heart. Serve immediately.
How to make a real-life version of Bag of Pork Chips from Mother 3. No, it's not a bag of actual pork...that would be weird and kinda gross. Instead, it's a dough for special puffed up potato chips you can make. Sorta tastes like a pringle. Watch it in action here!
What You Need:
- 1/2 cup cooked potatoes
- 1/2 cup cornstarch
- 1/4 tsp kosher salt
- 1/4 tsp shichimi togarashi
- 1/3 cup hot water
- Pork bullion, to taste
- Run cooked potatoes through a ricer. If you don’t have one, just mash them as much as you can. Add to a medium bowl. Add cornstarch.
- Season with salt and shichimi or red pepper flake. Mash together until it gets crumbly. Add hot water and carefully stir until cool enough to mash with your hands. Mix until a dough forms. Roll into a log and set aside.
- Bring about 1/2 an inch of water in a non-stick pan to a boil. Carefully add your potato log. Cook for 15 minutes, flipping every few minutes or so. Flipping will take multiple spatulas. Do it carefully.
- Once cooked, turn off the heat and carefully slide out of the pan. Allow to cool, pat dry if it’s wet, cover in plastic, and place in the fridge for at least 8 hours. Overnight works great.
- Using a mandolin slicer, slice 3mm thick. Try to get them in one even layer on a baking sheet, and place them in direct sunlight for about 8-10 hours. A day should suffice. Then, you can store them in an airtight container and they’ll keep for months.
- To make pork chips: Heat a small pot of oil to 350 degrees. Add a few dried chips at a time. Drain on paper towels and season with pork bullion to taste. Serve immediately.
