plus, it's healthy and hydrates your skin from the inside out. ✨

Recipe:

2 english cucumbers, peeled and sliced

1 cup plain yoghurt

2 garlic gloves, minced

1/2 lemon juice

pinch of sugar

salt, pepper and dill as you like

Make the dressing and then add the cucumbers. Enjoy!

I will be posting a new “chopped salad” series because:

  1. Am am trying to eat real food
  2. I am bored of lettuce salads

Chopped Salad #2

Edamame Mango Salad

Makes 4 servings

  • 1 cup edamame
  • 1 mango, cubed
  • (Optional) 1 can black beans, rinsed
  • 1 diced shallot, or half diced red onion
  • 1 cup white corn
  • 1 cucumber, diced
  • 1 tbs chopped Thai basil
  • (Optional) top with avocado

Dressing

  • 1 tbs lemon or lime juice
  • 1 tbs red wine vinegar
  • 1 tbs olive oil (I know oil is a no-no but this recipe does need it to help cut the acid)
  • Salt, pepper, and garlic powder to taste (go light on the garlic powder)
  1. Add all dressing ingredients to a jar or container with tight lid. Give it a really good shake to help emulsify the oil
  2. Wash, rinse, and chop all vegetables. Add to a large bowl
  3. Toss with dressing, enjoy.

Calories (omitting black beans) = 190 cals per serving

9. Spoon 2 Tbsp of taco filling into taco shells and stack them side by side onto prepared baking sheets

10. Spray the tops of the tacos with non stick cooking oil spray ( I use canola oil).

11. Bake for approximately 14-18 minutes or until the tortillas are lightly brown and edges are golden brown.
