Oatmeal Honey Cinnamon Muffins Recipe
Ingredients: 1 and 1/2 cups old fashioned oats, 1 cup nonfat Greek yogurt, 2 large eggs, 5 teaspoons cinnamon sugar, 3 tablespoons honey, 1 and 1/2 teaspoons baking powder, a dash of salt, and 1/2 teaspoon baking soda.
Method: Blend the oats to make oat flour, then put the flour in a bowl. Add in the cinnamon sugar, salt, baking powder, and baking soda. In a separate bowl lightly beat the eggs, then add the honey and yogurt, and mix the contents together – just barely combining them. Now pour the wet ingredients into the bowl of dry ingredients, and mix until combined and moistened. Spoon the mixture into a muffin tin lined with baking cups. Sprinkle some extra cinnamon sugar over the batter (optional, it just makes the muffins prettier). Bake at 335 degrees Fahrenheit for 14 – 16 minutes. Top with more honey and cinnamon sugar then enjoy!
