Summer rolls with sweet peanut butter miso dressing by @myhealthyappetite 💜
Sweet peanut butter miso dressing ¼ cup creamy peanut butter 1 tbsp miso 1 tsp minced fresh ginger 1 garlic clove minced ¼ tsp date syrup Combine all ingredients and add approximately 3 tbsp of water or as much as needed until you get the desire consistency. Fillings: sliced courgettes, cabbage, sesame seeds and cilantro. You can use any fillings of your preference but it’s always nicer if they have a crunchy texture. Instructions: Dip rice paper into warm water and rotate for about 20 seconds . Place onto a plate. Layer the fillings at the end of the rice paper that is close to you. Be careful not to over-fill or the paper will break. Fold rice paper over the filling from the bottom up. Then fold sides over and roll as tightly as possible. Enjoy! #letscookvegan
