I’m not saying you need to end up on the business end of a flog or paddle… Unless you WANT to 😜. I am, however, talking about the trust that only ownership brings. Let me see if I can illustrate it for you. Have you ever been driving in your car with a friend and the gas light comes on? You may have distance left to go and perhaps your friend mentions something about it, after you pass the third gas station in row. “Aren’t you worried you’re gonna run out of gas?” “Naw.” You say. Because this is YOUR car. You know IT and you know exactly how far you can push it on a empty tank. Because it’s yours. Again, consider your home. It really doesn’t matter if it’s a huge place or a small apartment. If it’s YOUR home, there is a sense of safety and protection it affords you when you shut the door to the out side world and are just “home”. Finally, think about the difference between “a” bed and YOUR bed. You can spend a week in paradise and luxury on a vacation and invariably when it’s time to go home what will most people say. “It will be good to sleep in MY OWN bed”. That bed feels right because it’s yours. You’ve made it yours. When you get in your bed it feels like you belong and you can truly relax. Ok. So what? As a Dom the first thing you have to do before you make her yours is to become hers. Become HER car. Show her that even when your tank is on empty and you’re near to burning out. You will make sure she is safe and taken care of. I promise if you do this your tank will be full before you know it. Become HER home. Be the place she feels safe and protected from the world. If you do this she will abide in you and no other with loyalty that will forgive any clutter you have lying around in your life. Become HER bed. When she is with you she needs to know she fits. You have to be HERS, familiar and comforting. When you become one she can rely on, one she can feel safe with and one she longs to come back to. Six-Hour No-Knead Sandwich Bread

Ever dreamed of having bread so gorgeous it doesn’t even look real? Even better, want it for almost no effort on your part? Of course you do.

INGREDIENTS:

Combine the flours, salt, and yeast in a large bowl. Heat water to 120F (or 46C) and stir in honey until dissolved. Make a well in the middle of the dry ingredients, and pour honey-water into it. Stir together until dough is shaggy and sticky, adding additional water a little at a time if necessary (especially if using all bread dough, as it needs more water to become fully hydrated).

Cover the bowl with a kitchen towel (or plastic wrap). Place in a warm spot in your kitchen and let rise until doubled and bubbly, about six to eight hours (the cooler your kitchen is, the longer it will take).

Butter a loaf pan, then set aside for the moment. Flour your counter and use your floured hands or a flexible bench scraper to turn out the dough onto the floured surface. Sprinkle a little more flour on top and knead a couple times, until dough is less sticky to the touch.

To shape your dough, first let it rest for a couple minutes, then flatten into a rough rectangle. Fold the bottom third of the rectangle up, and the top third of the rectangle down. Pinch all seams closed. If dough is still loose, rotate 90 degrees and repeat. (See this link for a visual guide.)

Place dough seam-side down in the prepared loaf pan. Let proof until the dough begins to crest over the edge of the pan. Preheat oven to 450F (230C). Right before putting it in the oven, slash the top of the bread with a sharp knife or a bread lame.

Bake for 30-35 minutes, turning the pan once halfway through to make sure it bakes evenly. Bread is done when the top is lightly browned and the bottom sounds hollow when you rap a knuckle against it. (Or when a thermometer inserted into the center reads 150F [65C]).

Remove from pan and let cool on a wire rack for at least 15 minutes before slicing.

NOTES:

As the name implies, this is a no-knead recipe that takes a shorter amount of time than a typical one. You can do this overnight, but I suggest using one meant for an overnight rise. I have one such recipe in the works, so keep your eyes peeled!

You can use all all-purpose flour, or all bread flour if you want. I like using a combination because it’s a little cheaper than using all bread flour, while still getting the chewiness and structure that bread flour provides.

Flour measurements are by weight, not volume, so a kitchen scale is required for this recipe (and any other baking recipes I post in the future). Measuring flour by volume is an incredibly inaccurate affair and recipes that do it are not valid. The other dry ingredients can be measured by volume without issue, but I’ve also provided metric weight measurements for the sensible people who use metric.

If you can’t get Red Star Platinum, you can use another kind of yeast, but I really recommend you find some. It’s definitely worth it. If you use a different kind of yeast, reduce the temperature of your water to 110F (43C).

If you want, you can replace the honey with an equal amount of granulated sugar or maple syrup (or another natural sweetener of your choice). The sugar is to feed the yeast, not to flavor the bread, so artificial sweeteners will not work.
