headcanon: in Sonic's world, the words "chaos" and "gem" are directly taken from the Ancients' language.
In Frontiers, the Ancients audibly use the term "Kaosjem" when referring to the Chaos Emeralds. So "jem" -> "gem" is basically unchanged. "Kaos" originally referred to the Chaos Emeralds specifically; then, as people began vying for their power, "kaos"/"chaos" began to mean the strife and disorder associated with people trying to get their hands on the Emeralds, and then by extension, strife and disorder in general.
