El origen del ‘Steak Tartar’ no está del todo claro! Muchas culturas han consumido carne cruda desde hace siglos, por lo que resulta difícil atribuirle un inventor al filete de solomillo crudo cortado a cuchillo. Esta técnica culinaria aparece en grandes clásicos de la literatura occidental, como en el Libro de viajes de Marco Polo, un famoso mercader veneciano del siglo XIII que viajó por el mundo y recogió sus vivencias en una extensa obra. En uno de sus cuadernos, nos relata que en la provincia de Caragian, en China, el consumo de carne cruda era muy habitual en todos los estratos sociales. No obstante, una de las teorías más famosas sobre el origen del steak tartar apuntaría a que fueron los jinetes tártaros, en Mongolia, los primeros en consumirlo. Este pueblo nómada viajaba siempre a caballo: se dice que almacenaban la carne bajo las sillas de montar, para ablandarla hasta que llegaba al punto perfecto para ser degustado en crudo, lo que dió origen al ‘Steak tartar’. Lo que sí que está claro es que el steak tartar tal como lo conocemos (la receta actual, especiada y con yema de huevo) es de origen francés, ya que este plato aparece mencionado en novelas de autores franceses del siglo XIX, como Jules Verne y Victor Hugo. De hecho, ya en pleno siglo XX, el steak tartar se convirtió en un plato de moda en todos los hoteles franceses. Cuentan que el reconocido chef Auguste Escoffier (1846-1935), considerado el creador de la cocina francesa moderna, añadió salsa tártara a la receta, y por eso pasaron a llamarlo steak tartar.
