Dragons guard towers as part of a parental instinct. They build their nests out of large stones which they stack higher and higher until the top is too high for any predators to even come close to. Towers look like nests to them, so they protect them from anyone trying to break in and steal their hatchling (or the prisoner they mistake for a hatchling).
