Homemade BBQ Chicken Pizza.
It was my first time making pizza crust and I am really happy with how well it turned out! At 870ish cals, it's not exactly on plan.
But I will take any opportunity to make things from scratch as opposed to the factory made foods.
Chicken Parmigiana
INGREDIENTS:
- Chicken Breast fillets
- 1x Tin of diced tomatoes
- Tomato paste or puree
- Diced Onion
- Diced Zucchini
- Sliced cheese
- Garlic salt
- Pepper
- Chilli paste
- Veggie Powder
- Chicken Seasoning
- Cooked Potato Chips to serve
- Salad to serve
- Start by cutting the fillets in half, but not completely.
- Mix the chicken seasoning, some water, oil, pepper in a bowl then dip each piece of chicken in the mix till completely covered. Pour over remaining mix to soak.
- In a Medium - Large Saucepan pour in the can of diced tomatoes and a tub of tomato paste. Cook on low heat.
- Add the Onions, Zucchini, Chilli paste, veggie powder & garlic salt to your tomato mixture and stir every 5 minutes or so until the zucchini, is cooked but not soggy. Remove from heat.
- Fry the chicken until cooked through, then fold your sliced cheese in half place on the chicken then fold over like you hadn’t sliced it before. If it helps you could try using some twine or toothpicks. I always use toothpicks.
- Place on an oven try then top with the tomato sauce & bake.
- after about 10 - 15 minutes remove from oven and top with some more sliced cheese, then place back into oven until its like a river of cheese and tomato.
- Place on plates and serve with hot chips and Fresh salad!
