    peanut butter and a glass of milk for a snack i feel like a blonde american 8yr old child in an after school special. i may have some extra mixed veg with my dinner, who knows. yolo. i think, however, i need to have either peanut butter or houmous in a day - it’s a double wammy of fat. say nothing of the sausage, linda mccartney vegetarian sausages will forever have my love. they taste better than meat sausages by a zillion times and yeah. the reason this bbq season i’m not going to miss sausages. working on a thai tofu burger - i’ll let you know how that goes…

    why do i write as if someone’s going to read this? honestly i swear these things are mainly for me.

    another rest day today - 3 in a row. however, the shin feels better, the sunburn doesn’t hurt as much (ie i can walk without cringing), and exams are over tomorrow. so it’s back on the yoga/pilates kick tomorrow. i am so excited honestly to be able to do some exercise i can’t wait.

    and i never thought i’d say that. i guess you only appreciate the amazing things your body can do when it can no longer do them.

    i also think that i need to stop saying yolo. it started out as hipster and ironic and now it’s a genuine thing i say. no. every time i say yolo in real life (yes it happens) i’m going to do 10… somethings. jumping jacks, squats, something that will deter me from saying it.

    in other news, will shatner on ‘have i got news for you’ made me laugh so hard people outside my window asked what i was laughing at. life.

    hahaha ok my mom bought me ensure clear and she was like oh theres no milk in it don’t worry (cause I’m vegan and all) so i check the ingredients to make sure and right there in bold text it says: contains milk. lol no. not drinking that,  nope.

    Food

    The foods I crave and look forward to are so much different than most people I know, but I’m cool with that. 

    I eat oatmeal (stovetop; none of that boxed nonsense) every weekend for breakfast or lunch. I cook it in almond milk instead of water, and then I mix a variety of things into it when it’s ready: banana slices, walnuts, coconut shreds, chocolate chips, peanut butter, maple syrup, brown sugar, dried cranberries…the possibilities are endless, and it takes about 7 minutes to make.

    Roasted tofu is another one of my favorites. Roasted. Roasted. Roasted. Not baked. Not sautéed. Roasted. Obviously, like with most things, the fried version tastes the best, but roasted tofu is a close second, and much healthier. I make a batch of it and it lasts a few days, so I can easily add it to whatever meals I’m cooking. 

    If I don’t have time to make my meal from scratch (which I prefer to do whenever I can) I love Gardein crispy mandarin orange chic’n. Seriously so good.

    Oh, and forget soda or alcohol. Give me a lemon, apple, honey, ginger fresh-squeezed juice from my favorite local vegetarian cafe. 

    I’m also really into salads lately, and have been trying a bunch of different recipes to find dressings and salad combinations that I love. I’m a big fan of chopped salads. I also realized that I don’t really like most “mixed greens” in my salad. I’d rather have arugula or Boston lettuce if I’m going to have a leafy green. 

    Tonight for dinner I’m making a barley, corn and green bean salad. I’ll put my leftover soy lime roasted tofu on mine, and I’ll put chicken strips and goat cheese on A’s. Considering making some 100-calorie brownies for dessert, but we’ll see. 

    I fucking love cooking.
