Ugh, why are cake pans so expensive, and don’t come in sets? I just want to make a fancy stout cake for my anniversary.
I did however get a potato ricer and it rung up $10 cheaper than it said, so I guess that’s a score. Now I can make spaghettieis. The workers didn’t have any idea what a pizza docker was though, and when I showed her a photo of it she said she’d never seen one and that they were “pretty basic”. I don’t think I would ever describe Sur La Table that way, overpriced yes, but not basic.
Guinness Chocolate Cake with Cream Cheese Frosting
One of my absolute favorite desserts is this Guinness chocolate cake with cream cheese frosting that they serve at a local restaurant. One day, I was really craving it but since I cannot have regular flour anymore, I had to search for an alternative. I realize that beer is not primal but if you were to consume it, stout is the best way to go.
I couldn’t find a satisfactory primal/paleo recipe so I decided to tweak one (click here for the recipe). Any primal/paleo baker would advise against this but I didn’t have a choice. The rule of thumb is for a certain amount of all-purpose flour called for in a recipe, replace it with 20-30% coconut flour + 1 egg per ounce of coconut flour. Coconut flour in itself doesn’t have gluten so you need the eggs to help bind your batter.
Enjoy!
Ingredients: stout beer, unsalted butter, dutch process cocoa powder, coconut flour, raw honey, baking powder, salt, eggs, sour cream, 70% cacao chocolate chips, heavy cream, vanilla extract
