buddha bowls
This is one of my favourite weekday meals. It’s fun and uses up alot of vegetables and leftovers that may be thrown away otherwise. I start by steaming some rice (perfferably brown rice) or basmati, and cooking vegetables of your choice.
this is usually what mine looks like (serves 4)
2 cups of brown rice
1/2 yam/sweet potato
1 bell pepper
3/4 cup mushrooms
cashews
pumpkin seeds
1 florette lightly steamed broccoli
thinly sliced avacado
Dressing:
soy sauce
