Beef Tostadas - Crock Pot Mexican
We love Mexican food in this house, so I had to try this crock pot recipe. I found this on Parents.com quite a while ago, but happily you can still find the recipe at their website.

Suggestion: This recipe was good, with one caveat, next time I will cook less time than the recipe indicates. The recipe calls to cook 6 hours on high or 8 hours on low. I opted for the 8 hours on low and while we still enjoyed it, the meat was a little dry for my taste.
As usual in our house we go for kid-friendly, but if you are kid-free, you can easily spice up the meat a bit more for a kick.
One great thing about this recipe is that it’s only a 15 minute prep and the crock pot does the rest.
Quick, Easy and Not Kid Friendly - Thai Noodle Bowl
Not every recipe turns out exactly as planned. Oh well!
I found a recipe in Parent’s Magazine that was supposed to be healthy (lower sodium); a good use for leftovers and kid friendly. Two out of three was not bad. So the verdict on the Thai Noodle Bowl - Good! Will I make it again, ehhh probably not.
What you need:
4 cups low-sodium beef stock
2 tbsp low-sodium soy sauce
6 oz. leftover (cooked) roast beef; cut into strips
6 oz. Soba noodles
1 1/3 cup shredded carrots
2/3 cup small broccoli florets
1 cup fresh baby spinach shredded
1 tbsp cilantro
Instructions:
Bring stock and soy sauce to a boil on medium-high heat. Stir in the beef and the noodles; return to boil. Reduce heat, cover and simmer for 3 minutes.
Add carrots and broccoli. Simmer another 2 to 3 minutes. Stir in spinach and cilantro. Serves 4.
Everything in this recipe my son eats; yet he would not touch this. Who knows! Because this recipe came from a family magazine it lacked the flavor complexities that would have taken this recipe from a good recipe to a make-it-again recipe.
