Mini Donuts

hello everyone, and happy mothers day to all you mommy bloggers! as i type this, i’m waiting for the glaze on my mini donuts to set so i can pack em’ up and take them to our family brunch at my aunts house. these donuts are really cute and really tasty. i really wanted to use a chocolate glaze but i was way too lazy after getting home from work this morning so i just stuck with a plain glaze. :) 

Mini Baked-Glazed Donuts (makes 36)

  • 1 ¼ cups cake flour
  • ½ cup sugar
  • 1 ¼ teaspoons baking powder
  • ⅛ teaspoon ground nutmeg
  • 1 teaspoon salt
  • ½ cup buttermilk
  • 1 egg, lightly beaten
  • 1½  tbsp butter, melted

Preheat oven to 425. use a nonstick cooking spray on the mini donut pan. mix dry ingredients first. then add wet ingredients. fill each donut cup halfway. they will rise when in the oven. bake 4-6 minutes.

Glaze

  • 1 cup confectioners’ sugar
  • ¼  cup milk
  • ½  tsp vanilla extract

mix all ingredients until the sugar is completely dissolved. use immediately to glaze the donuts. dip individual donuts into glaze and set on wax paper (i used foil) to dry.
