Healthy, Low GI, Gluten Free Macaroni & Cheese Recipe

Ingredients:

  • 1/2 package GoGo Quinoa Pasta
  • 1 egg
  • 7 tbsp scarpone’s low fat ricotta cheese
  • 4 oz shredded low fat mozzarella
  • PAM cooking spray
  • 1 tbsp extra virgin olive oil

Instructions:

1.Boil quinoa pasta in pot for 12-13 minutes, then drain for a few minutes with a strainer over the sink.

2.Shred the mozzarella cheese (if not already shredded) and place it in a side dish for now

3.Beat egg, olive oil, and ricotta together until mixture is completely even, it should look like a creamy texture.

4.Spray three mini dishes (sizes as pictured) with cooking spray to prevent any sticking of the food after it’s been baked.

5.Pour in pasta and egg mixture, and mix together in the dish.

6.When evenly mixed, top evenly with the shredded cheese and place in oven for 20-25 minutes.

7.Take out, let cool for 5-10 minutes, and enjoy!
