Single Serving Brownie Recipe

Welp I’ve pretty much perfected a single serving microwave brownie:

  • 2 tbsp flour
  • 2 tbsp cocoa powder
  • 2 tbsp sugar (or a little less depending on how sweet you like stuff)
  • 1/4 tsp baking soda
  • Pinch of salt (to taste)
  • 1 tbsp oil (you can omit it entirely or substitute with banana or apple sauce i suppose, but oil makes it taste better imo)
  • 2 tbsp soy milk (or regular milk cause that’s what most people drink)
  • 1/4-1/2 tsp vanilla extract

Combine together in a mug or small bowl or whatever is small and microwave safe really. Microwave 1 minute. If you like it more cake-like and dry, a minute and a half.

It’s enough to share for two, unless you want to eat a lot at once (which I do, because chocolate). I haven’t tried it with wheat flower yet but that would probably work just as well and be marginally healthier.
